Simple Baked Fish in Foil

This is so simple I cant believe I couldnt find it anywhere. The onion keeps the fish from drying out and gives a lovely mild flavor. We especially like Tilapia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.

Simple Baked Fish in Foil: A Busy Mom's Go-To Recipe

As a busy mom of three, I’m always on the lookout for quick, easy, and healthy recipes that the whole family will enjoy. This baked fish in foil recipe has become a staple in our house, and for good reason. It's incredibly simple to prepare, requiring minimal cleanup, and it’s incredibly versatile. The best part? It’s so delicious!

I discovered this recipe a few years ago when I was searching for a way to cook fish without making a huge mess. I'm not a fan of overly complicated recipes, and this one fits the bill perfectly. The key is the onion; it not only adds flavor but also prevents the fish from drying out during cooking. You can use any type of white fish you prefer – tilapia, cod, or even halibut work wonderfully. I often use whatever's freshest at the market, or even leftover fish from a previous meal.

The beauty of this recipe lies in its adaptability. Feel free to experiment with different seasonings to create your own unique flavor combinations. Lemon pepper is a classic choice, but you can also try herbs like dill, parsley, or thyme. I've even been known to add a pinch of red pepper flakes for a little kick. If you're feeling adventurous, try different citrus fruits like orange or grapefruit instead of lemon.

One of my favorite things about this recipe is how easy it is to prepare ahead of time. I often assemble the foil packets in the morning and then pop them in the oven or on the grill when I'm ready to cook. This is especially handy on busy weeknights or when we have guests over. It also makes for a perfect make-ahead meal for picnics or camping trips.

The cleanup is a breeze – just toss the foil packets in the trash! This is a huge win for me, as I hate spending time scrubbing pans and dishes after dinner. This recipe is a lifesaver when you want a healthy and delicious meal without the hassle of a complicated cooking process. The kids love it, and honestly, so do I. It’s a recipe that feels sophisticated but requires almost no effort.

Beyond the Basics:

For extra flavor: Marinate your fish for 30 minutes before cooking in a mixture of olive oil, lemon juice, and your favorite herbs and spices.

Add some veggies: Include other vegetables in your foil packets, such as sliced bell peppers, zucchini, or asparagus. These will cook alongside the fish and add extra nutrients and flavor.

Make it a complete meal: Serve your baked fish with a side of rice, quinoa, or roasted vegetables for a well-rounded and satisfying meal.

Grill it up: This recipe is equally delicious when cooked on the grill. Just adjust the cooking time as needed, depending on the heat of your grill. The smoky flavor from the grill adds a fantastic dimension to the fish.

Variations:

  • Mediterranean Fish: Add crumbled feta cheese, Kalamata olives, and sun-dried tomatoes to your foil packet for a Mediterranean-inspired dish.
  • Spicy Fish: Include a pinch of red pepper flakes or a dash of your favorite hot sauce for a spicier kick.
  • Herb-Roasted Fish: Use fresh herbs like dill, parsley, or thyme instead of lemon pepper.

This simple baked fish in foil recipe is a versatile and delicious option for any occasion. It's quick, easy, healthy, and leaves you with minimal cleanup – what more could you ask for? Give it a try and let me know what you think! I'm confident it will become a new family favorite.
