Step-by-step

  • Preheat oven to 350F.
  • Line a 9x9 baking pan with foil and spray with cooking spray.
  • Mix butter with a mixer (hand or stand) until smooth.
  • Mix in cake mix and egg; beat until combined. Note: if you use a hand mixer it will take a long time to come together. Just keep on mixing until you get a thick cookie dough.
  • Press 2/3 of the cake mixture in the bottom of the prepared pan.
  • Sprinkle white chocolate chips over the top and drizzle the sweetened condensed milk over the top of the chocolate.
  • Break up the remaining dough and crumble it over the top of the bars.
  • Press lightly to seal.
  • Bake for 28-33 minutes, until slightly browned.
  • Cool completely before cutting. (It helps to refrigerate them after they’ve reached room temperature.) Note: you can do this in a 9x13 pan by using the whole can (14 oz) of sweetened condensed milk and 1 cup of white chocolate chips, but the bars will be thinner. Baking time will also need to be adjusted.

My Lemon Gooey Bar Baking Adventure: A Recipe for Success (and Deliciousness!)

Baking has always been a form of therapy for me. The rhythmic mixing, the satisfying smell of warm butter and sugar, the anticipation of the final product – it's a process that grounds me and allows me to escape the daily grind. Lately, I’ve been craving something lemony and sweet, something that perfectly balances tartness and indulgence. That’s how I found myself baking these incredible Lemon Gooey Bars.

The recipe itself is surprisingly simple. It starts with a base of lemon cake mix, which provides a wonderfully bright and zesty flavor foundation. I love using a lemon cake mix because it takes the guesswork out of achieving that perfect lemon tang. Then, the magic happens with the addition of creamy butter, a rich egg yolk, and the decadent sweetness of sweetened condensed milk and white chocolate chips. The contrast of textures – the soft, cakey base, the creamy white chocolate, and the slightly crunchy crumble topping – is just delightful. I added the white chocolate chips because who can ever say no to extra indulgence! The final result is a bar that’s both incredibly moist and pleasantly gooey, a perfect balance of sweetness and tartness.

I usually find myself baking on weekends when my kids aren't around so I can have the whole kitchen for myself. The process of making these Lemon Gooey Bars is therapeutic, but also quite easy and quick. There's not a whole lot of room for mistakes which makes it even better! It's a wonderful way to spend a relaxing afternoon, and the end result is a treat that's sure to impress friends and family. But honestly, I'm perfectly happy to hoard them for myself, enjoying one or two (or maybe more) while sipping on a warm cup of tea.

What makes these Lemon Gooey Bars truly special is their versatility. You can easily adjust the recipe to suit your preferences. For instance, you could use a different type of cake mix, experiment with various types of chocolate chips, or even add a layer of fresh lemon curd for an extra burst of citrusy flavor. I tried this a few times and I was quite satisfied with the results.

One tip I learned along the way is the importance of letting the bars cool completely before cutting. This helps them set properly, ensuring that they hold their shape and have that perfect gooey texture. A little patience goes a long way in baking, I found that out. I often find myself overdoing it and cutting into the bars while they're still hot. And they’re never as good that way!

So, whether you're a seasoned baker or a complete novice, I highly recommend giving these Lemon Gooey Bars a try. They’re incredibly easy to make, irresistibly delicious, and the perfect treat for any occasion. In short, they're the ultimate comfort food, a little slice of heaven that's guaranteed to brighten your day. And trust me, the compliments will roll in. You might even become the star baker among your friends! Trust me!

Now, I’m off to bake another batch. I'm thinking of trying a variation with a sprinkle of lemon zest for extra zing. Stay tuned for updates!
