Step-by-step

  • Heat oven to 375. Line 2 baking sheets with aluminum foil.
  • Prepare the corn flakes by either crunching by hand (will result in very crunchy chicken) or placing in a plastic bag or wrap and rolling with a rolling pin (still crunchy but less coarse). Add in the french fried onions, if using.
  • In a pie dish or shallow bowl, whisk together the corn flake crumbs, chili powder, cumin and garlic salt.
  • Pour evaporated milk into a second pie dish.
  • Season the chicken with salt and pepper. Dip each chicken thigh into the milk, then roll it around in the corn flake crumbs until completely coated. Shake off excess. Place on the prepared baking sheet. Repeat with remaining chicken.
  • Bake chicken at 375 for 50-55 minutes or until golden and crispy and internal temperature registers 160 on an instant-read thermometer. (Note - if making the mushrooms also, they will be ready after about 30 minutes).
  • May be served warm or at room temperature.
