Fry in small amt. of 100% pure virgin olive oil, or a good corn oil, till golden on one side, then flip over & brown on second side.
Drain on paper towels.
I usually make a tossed salad with this dish, plus baked potatoes.
If mixture, when ready to form into "cakes" does not seem moist enough, add 1tablespoon milk.
If Mix is too moist, add sprinkle of instant potatoes till consistency is corrected.
(p.s. Sometimes I add instant potatoes instead of bread crumbs, they turn out just as good)

Flip the cakes only when a deep golden crust forms across the bottom edge, roughly four minutes into frying. Drain excess oil on absorbent paper towels immediately upon removal from the skillet.
Binder Adjustments
Bread crumbs absorb moisture differently than instant potato flakes. Adjust the mixture by incorporating milk one tablespoon at a time if the patties crack during shaping. Alternatively, dust extra instant potato flakes over wet mixtures until the dough holds a firm disk shape without sticking to palms.
Storage And Second-Day Use
Refrigerate leftover cooked patties in an airtight container for up to three days. Reheat chilled croquettes on a wire rack inside a 350-degree oven for ten minutes to restore the exterior crispness.
