Step-by-step

  • Slice the ends off of the squash. Slice into 1/2" rings and remove the seeds with a spoon. Reserve the seeds for another use or roast them with some cayenne pepper, salt, and cumin and sprinkle over the finished dish.
  • Lightly salt the squash and let sit for 30 minutes. Completely dry off with paper towels, removing the salt.
  • Heat enough oil to coat a saute pan over medium high heat. Lightly salt the squash rings with fresh salt and add them to the pan. They should sizzle the moment they hit the pan. Don't crowd them or they'll steam more than they'll brown. Saute until lightly browned (about 2 minutes per side).
  • Remove to a plate and grate lime peel over them and squeeze lime juice on them. I used the juice and zest from 1/2 lime for each Delicata.
  • Top with the Currant, Fennel and Apple Relish and serve warm. Optional: top with spiced roasted squash seeds.
  • Combine all ingredients in a small pot and simmer over medium low heat until the cider is reduced by half. Strain and sprinkle over the Crispy Delicata Rings.

Crispy Delicata Rings with a Sweet and Savory Twist

As a busy working mom, finding time to cook delicious and healthy meals can often feel like a Herculean task. Weeknights are a whirlwind of homework, soccer practice, and the ever-present struggle to keep everyone fed and happy. This recipe for Crispy Delicata Rings with Currant, Fennel, and Apple Relish is my new go-to – it's elegant enough for a dinner party, yet simple enough for a busy weeknight.

The beauty of this dish lies in its simplicity. The delicate squash, roasted to perfection, offers a delightful sweetness. The relish, a vibrant mix of tart apples, fragrant fennel, and sweet currants, provides a beautiful counterpoint. A squeeze of fresh lime brightens the whole dish, adding a zesty zing that cuts through the richness of the squash. It's a harmonious blend of textures and flavors that elevates a simple vegetable into a culinary masterpiece.

What I particularly love about this recipe is its versatility. The ingredients are readily available, and the preparation is straightforward. On those nights when I'm short on time, I can easily prep the relish earlier in the day or even the night before, saving precious minutes during the weeknight rush. The squash itself requires minimal attention – a quick slice, a sprinkle of salt, and a few minutes in the pan – and it's done! The result? A stunning dish that's both visually appealing and incredibly delicious.

I often find myself experimenting with variations of this recipe. Sometimes, I'll swap out the pink lady apple for a Honeycrisp or Granny Smith, depending on what's in season. I've also experimented with different spices, adding a pinch of cinnamon or nutmeg to the relish for a warm, comforting touch. The possibilities are endless! This recipe is a blank canvas, inviting you to express your culinary creativity.
