Low Syn Lemon Drizzle Cake

Since starting on the Slimming World journey, one thing we have really missed is cake. I know the idea of food optimising is that you never really have to go without anything, as long as you put a number on it, but I've never really fancied the idea of using up a whole day's syn allowance (or more) on one piece of cake.

Step-by-step

  • Remove the zest from the lemons using a hand grater and separate the egg whites from the yolks
  • Mix together the flour, 2 1/2 tbsp of granulated sweetener, the lemon zest, juice of 1 lemon and 5 egg yolks
  • In another bowl whisk the egg whites until they form soft peaks
  • Gently fold the egg whites into the flour and egg yolk mixture, until they are mixed evenly
  • Pour the mixture into a loaf tin (I lined the bottom with baking parchment and gave it a quick spray with Frylight just in case)
  • Bake for 25-30 minutes at 180°C until golden brown or until the knife comes out clean. Don't be tempted to check it before 25 minutes or the cake will sink!
  • While the cake is cooking mix the remaining sweetener with the juice of the other lemon and heat on low in a saucepan
  • When the cake is done (to check insert a knife and it should come out clean) remove it from the oven, turn the heat down to 100°C then pour the lemon syrup over the top of the cake and put it back in for another 10 minutes
  • Leave to cool, and then cut into 8 equal slices

As a busy working mom, finding time for myself is a luxury. Even more so, finding time to bake a cake that doesn't completely derail my healthy eating goals felt like mission impossible. I've always loved baking, but since embracing a healthier lifestyle, many of my favorite recipes were off-limits. The guilt of indulging in sugary treats far outweighed the pleasure. I'd often find myself staring longingly at the bakery window, wishing for just one bite of that luscious lemon drizzle cake, but the calorie count always held me back. The baking process itself is surprisingly straightforward. I followed the simple steps, meticulously measuring out each ingredient. I’ve always been a bit of a perfectionist in the kitchen, so the precision was something I appreciated. The aroma wafting from the oven as it baked was heavenly – a delicious mix of lemon and sweetness. The wait was agonizing, but seeing that golden-brown top emerge from the oven was worth it. Tips for Success:

  • Use fresh lemons: The freshness of the lemons makes a significant difference in the taste of the cake.
  • Don't overbake: Overbaking will result in a dry cake. Use a toothpick to check for doneness. Insert it into the center; if it comes out clean, the cake is done.
  • Let it cool completely: This allows the flavors to meld and the cake to firm up before slicing and serving.

This Low Syn Lemon Drizzle Cake is more than just a recipe; it's a celebration of finding balance in a busy life, a testament to the fact that healthy eating doesn't mean sacrificing pleasure. It’s proof that delicious and healthy can, and should, exist together.
