I remember vividly the bustling roadside dhabas, the aroma of spices filling the air, and the vibrant colors of the freshly prepared dishes. This Gobi Dhaba Style captures that essence, bringing a taste of India straight to my kitchen table. The secret to its deliciousness lies in the perfect balance of spices and the slight crunchiness of the cauliflower. This recipe is so versatile; it adapts easily to whatever vegetables I have on hand. Sometimes I add extra green beans or peas for extra nutrition and a pop of color. I often adjust the chili powder depending on my family's preference, sometimes opting for a milder blend for the little ones.
