Step-by-step

  • Trim fat from chops.
  • Mix flour with curry powder and salt & pepper to taste (I use about 1/2 teaspoon Herbamare & 1/4 teaspoon pepper).
  • Coat chops with mixture and place in a casserole dish. (Note - an easy way to do this is to place the seasoned flour in a plastic bag with the chops tie the top and give it a really good shake.)
  • Mix any remaining flour into the plum jam with tomato paste and gradually blend in the light stock.
  • Add vegetables to dish and pour the mixed liquid over the contents.
  • Cover and cook in a moderate oven 180°C for 1 1/2 hours or until meat is tender.
  • Serve with boiled rice and a green vegetable.

My Go-To Comfort Food: Lamb Curry Casserole

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. But there are some recipes that are so simple, so flavorful, and so forgiving that they become lifesavers. This Lamb Curry Casserole is one of those recipes. It's incredibly easy to throw together, even on a weeknight, yet it tastes like something you'd spend hours perfecting. The beauty lies in its simplicity – minimal chopping, minimal fuss, maximum flavour.

I discovered this recipe a few years ago during a particularly hectic phase in my life. Juggling work, kids' activities, and the general chaos of everyday life left me with little time to experiment in the kitchen. I needed a meal that could feed my family quickly and efficiently, yet still be something they would actually enjoy. This casserole fit the bill perfectly. It's incredibly adaptable too; I often change the vegetables depending on what's fresh at the market or what we have leftover in the fridge. Sometimes I’ll add some potatoes, or maybe some green beans – it always turns out great.

The best part? The leftovers are even better the next day! The flavours have a chance to meld and deepen, creating a rich and complex taste that’s truly comforting. I often pack the leftovers for my husband’s lunch, knowing it’ll be a delicious and satisfying midday meal. It’s also perfect for meal prepping – make a large batch on the weekend, and you have delicious, healthy meals sorted for the week ahead. I usually double the recipe and freeze half for those particularly busy weeks.

Beyond its practicality, this Lamb Curry Casserole holds a special place in my heart. It's become a family favorite, a ritual of sorts. The aroma filling the kitchen as it bakes evokes feelings of warmth and comfort, reminding me of simpler times and the importance of sharing a good meal together. The kids always help with the prep, making it a fun family activity. It's a reminder that even in the midst of our hectic lives, there is always time for simple pleasures – like a delicious home-cooked meal enjoyed together.

Beyond the Recipe: This recipe is a testament to the power of simple ingredients and a little bit of time. It’s a reminder that you don’t need to spend hours in the kitchen to create a truly delicious and satisfying meal. It’s the perfect example of a recipe that’s both versatile and adaptable, allowing you to experiment with different vegetables and spice levels to suit your own taste. Whether you’re a seasoned cook or a kitchen novice, this Lamb Curry Casserole is a recipe that will surely become a staple in your culinary repertoire. Enjoy!

Tips and Tricks:

  • Bone-in vs. Boneless: I prefer using bone-in lamb chops for added flavor, but boneless will work just as well. Adjust cooking time as needed.
  • Spice Level: Feel free to adjust the amount of curry powder to your liking. If you prefer a milder curry, use less; if you like it hot, add more!
  • Vegetable Variety: Don't be afraid to experiment with other vegetables! Potatoes, peas, green beans, and sweet potatoes all work well in this casserole.
  • Make it Ahead: This casserole can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
  • Freezing: Assemble the casserole, cover it tightly with foil, and freeze it for up to 3 months. Thaw it overnight in the refrigerator before baking.
