Slow Cooker Beef Bourguignon

I wanted to make beef Burgundy ever since I got one of Julia Child's cookbooks, but I wanted to find a way to fix it in a slow cooker. My version of the popular beef stew is still rich, hearty and delicious, but without the need to watch on the stovetop or in the oven.

For years, I've dreamt of tackling Julia Child's Beef Bourguignon. The idea of that rich, complex stew simmering away, filling my kitchen with its intoxicating aroma, was incredibly appealing. But let's be honest, life as a busy working mom doesn't always allow for hours spent tending to a stovetop masterpiece. That's where my slow cooker comes in. It's become my secret weapon, allowing me to enjoy the flavors of classic dishes without the time commitment.

This slow cooker adaptation of Beef Bourguignon is my go-to comfort food. It's incredibly easy, requiring minimal hands-on time, but the result is a dish that's bursting with flavor. The slow cooking process allows the beef to become incredibly tender, melting in your mouth with each bite. The rich red wine sauce, infused with the savory depth of bacon, mushrooms, and onions, is simply irresistible. I often find myself serving this to friends and family, and it's always a guaranteed crowd-pleaser. The best part? The cleanup is a breeze! My slow cooker makes even the most ambitious recipes feel achievable, even on a busy weeknight.
