Step-by-step

  • In order to make sure the meat is room temperature, remove it from the fridge at least 30 minutes before cooking.
  • At this time spend 2 to 3 minutes salting the meat so it becomes tender prior to cooking.
  • Once the meat is room temperature heat the pan to Med High heat.
  • Add 1 tbsp of butter to the pan to melt.
  • As the butter melts, add the Virgin olive oil.
  • When the butter is melted make sure to gently swirl and coat the bottom of the pan with the butter and oil.
  • Gently place the steaks one by one in the pan and set a timer for 2 minutes.
  • Lightly salt and pepper the top side of both steaks.
  • After two minutes gently turn the steaks over with tongs and repeat steps 7 and 8.
  • After both sides have been seasoned and cooked for two minutes on each side, gently turn the steaks over again and add 1/2 a tbsp of butter to the top of each steak, and set the timer for another two minutes.
  • Make sure to occasionally tilt the pan and coat the meat with the melted butter and oil.
  • After two minutes gently turn the steaks over with tongs and repeat steps 10 and 11.
  • At this point depending on thickness it should be rare. Remove the meat from the heat and plate it.
  • Cover for 5 minutes to let the meat settle then serve.
  • For medium repeat steps 10 and 11, but use the butter and oil already in the pan to baste the meat with a spoon. Repeat a third time for well done.
