Step-by-step

  • Combine salt and 2-3 cups of water in a long casserole dish.
  • Peel your eggplant and slice into ½ inch to 1 full inch slices. Feel free to cut them into squares to resemble the original Filet o Fish.
  • Place the eggplant slices into the casserole dish and submerge them completely (you may have to add more water).
  • Let them soak for 60 minutes, or overnight.
  • While you are waiting for your eggplant to soak prepare your batter station. Using 3 shallow bowls arrange as follows flour in the first, prepared egg replacer in the second and the panko crusts in the third. You will be breading the eggplant in this order.
  • Pre-heat your deep-fryer (or a large pot with enough oil to cover the eggplant) to 375-400 degrees.
  • After you have breaded your eggplant, cook for 3-5 minutes on each side until golden brown.
  • While you are frying prepare your bun. Using a steamer, steam your buns until they are soft and almost fluffy in texture.
  • Add tartar sauce to crown side of the bun.
  • Place the cooked eggplant filet on top, add 1 slice of vegan cheese wedge centered on the filet, and add heel of the bun and enjoy!

Vegan McDonald's Filet-O-Fish: A Home Cook's Take

As a busy mom, finding time to cook delicious and healthy meals can feel like a never-ending race against the clock. Weeknights often mean quick, convenient options, but I also yearn for those special moments when we can sit down together as a family and enjoy a truly satisfying meal. That's why I've always been fascinated by the challenge of recreating fast-food favorites in a healthier, plant-based way. This vegan Filet-O-Fish is my latest attempt, and it’s been a resounding success! It’s a testament to how creative you can be in the kitchen with simple ingredients, and how much joy a homemade meal can bring.

The inspiration struck me one afternoon while I was daydreaming about a familiar fast-food treat. I started thinking: could I replicate that crispy, flaky fish texture using only plant-based ingredients? The answer, as it turned out, was a resounding yes! It all started with a humble eggplant, which, when prepared correctly, can mimic the delicate texture of fish remarkably well. This recipe focuses on a simple, yet effective process of breading and frying to achieve that satisfying crunch. And the best part? It's a breeze to make, even on a busy weeknight, proving that healthy eating doesn't have to be complicated or time-consuming.

The key to this recipe lies in the preparation of the eggplant. Soaking the slices in salted water helps to draw out excess moisture, resulting in a crispier final product. This step might seem tedious, but trust me, it's worth it! I prefer to do this step the night before, allowing the eggplant to soak overnight in the refrigerator. This not only makes the process easier, but it also allows the flavors to meld together beautifully, enhancing the overall taste. The breading process itself is straightforward: a simple flour-egg replacer-panko sequence provides the perfect texture, creating a delicious and satisfying vegan alternative to the traditional Filet-O-Fish.

The steamed bun provides a soft and yielding counterpoint to the crisp eggplant, and the addition of vegan cheese and tartar sauce perfectly complements the flavors. The whole experience of making this dish, from prepping the ingredients to the final satisfying bite, was a surprisingly rewarding one. It’s a testament to the creativity that can come from adapting familiar favorites to suit a healthier lifestyle. And the joy on my children's faces when they tasted it? Priceless! It’s a recipe that celebrates family, flavor, and the joy of making memories around the dinner table.
