Step-by-step

  • Cut meat into thin strips, about 2 inches in length.
  • Put beef broth, soy sauce, brown sugar, sesame oil and garlic into slow cooker and stir. Add meat.
  • Cook on low for 3 hours (or high for 1 1/2).
  • Remove 1/2 C. of the liquid and place into a small bowl and add cornstarch. Whisk until smooth.
  • Pour cornstarch mixture back into the crock pot and stir. This will thicken your sauce. Cook for another 30 minutes.
  • At this time you can add your frozen broccoli to the crock pot (at the same time you add the cornstarch) or you can steam your broccoli separately in the microwave. If you steam or cook separately just stir them into the sauce before serving so they're covered in that saucy goodness.
  • Serve on top of rice!

My Go-To Weeknight Dinner: Slow Cooker Beef and Broccoli

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like an impossible task. Between work, chauffeuring kids to activities, and trying to squeeze in a little "me time," the last thing I want to do is spend hours in the kitchen. That's why I've become obsessed with my slow cooker. It's a lifesaver! This Slow Cooker Beef and Broccoli recipe is my absolute go-to weeknight dinner. It's incredibly easy, requires minimal prep time, and tastes amazing. The best part? It's ready just in time for dinner, without requiring me to hover over the stovetop.

The beauty of this recipe lies in its simplicity. You simply toss everything into the slow cooker in the morning, and by dinnertime, you have a flavorful, tender beef dish that's ready to serve. The slow cooking process ensures the beef is incredibly tender and melts in your mouth. The sauce is rich and savory, perfectly complementing the crisp-tender broccoli. The combination of soy sauce, brown sugar, and sesame oil creates a unique flavor profile that everyone in my family loves. I often double the recipe so we have leftovers for lunch the next day, making my already busy schedule that much easier.

What I love most about this recipe:

  • Ease of preparation: Minimal chopping and prep work are required. It's a perfect recipe for those nights when you're short on time and energy.
  • Flavorful and satisfying: The rich, savory sauce coats the beef and broccoli perfectly, creating a truly delicious dish. The sweet and savory flavors balance each other beautifully.
  • Versatile: You can easily customize this recipe to your liking. Add different vegetables, adjust the amount of soy sauce or brown sugar, or serve it over noodles instead of rice.
  • Healthy: This recipe is a relatively healthy option, packed with protein and vegetables. It's a guilt-free way to enjoy a delicious and satisfying meal.
  • Make-ahead friendly: The slow cooker does all the work, allowing you to prep it in the morning and come home to a ready-made dinner.

I often serve this with a side of steamed rice, which absorbs the delicious sauce perfectly. It's a complete and balanced meal, providing protein, carbohydrates, and plenty of healthy vegetables. This recipe has become a staple in our house, and I'm sure it will become one of your favorites too. Give it a try, and let me know what you think!

Tips and Variations:

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • If you don't have brown sugar, you can substitute with granulated sugar.
  • Feel free to experiment with different types of beef. Sirloin or flank steak also work well.
  • Add other vegetables, such as sliced carrots, mushrooms, or bell peppers.
  • For a thicker sauce, use more cornstarch.

This Slow Cooker Beef and Broccoli recipe is more than just a meal; it's a testament to the power of simple, delicious food that fits into even the busiest of lifestyles. Enjoy!
