Ingredients:

2 eggs

1/2 cup milk

1 cup caster sugar

125g butter, softened

1 large lemon (or 2 small) – juice first & set aside for topping, then finely grate the rind

1 1/2 cups self-raising flour (sifted, or not!)

Topping:

1/3 cup lemon juice (from the lemon used above)

1/2 cup caster sugar
