Step-by-step

  • Add the olive oil to your 5 or 6 quart electric pressure cooker and turn on to saute function.
  • When the pot is heated, add the diced onion. Saute for 3 minutes, or until translucent.
  • Add the chicken broth to the onions and using a wooden spoon scrape the browned bits off of the bottom so they don't burn during cooking.
  • Turn the pressure cooker off of saute function.
  • Add the salsa verde, cumin and rice. Give it a quick stir and nestle the chicken breasts on top of the rice mixture.
  • Sprinkle with salt.
  • Place the lid on the pressure cooker and cook on high pressure for 10 minutes with a 10 minute natural pressure release. (When the 10 minutes is completed cooking, let the pot sit for 10 more minutes until you release the pressure manually.)
  • Remove the chicken from the pot and fluff the rice.
  • Place the chicken back on top of the rice and top with the shredded cheddar.
  • Place the lid back on the pressure cooker and let sit for 3-4 minutes, or until the cheese is melted from the heat of the pot.
  • Serve immediately.
  • Optionally top with sour cream and cilantro.

Ingredients That Make a Difference

The Chicken: I prefer using boneless, skinless chicken breasts for ease of cooking and tenderness. However, you can also use chicken thighs for a richer flavor. Just be mindful of the cooking time, as thighs may require a slightly longer pressure cook.

The Salsa Verde: This is the star of the show! A good quality salsa verde will make a world of difference. I've experimented with various brands, and my personal favorite is the one with a good balance of tangy, spicy, and herbaceous notes.

The Rice: Long grain white rice is my go-to, but you can definitely experiment with other types of rice, such as brown rice or basmati rice. Just be sure to adjust the cooking time accordingly, as different rice varieties require varying amounts of cooking time.

The Spices: Cumin adds a warm, earthy flavor that perfectly complements the salsa verde. A pinch of salt enhances the flavors and brings everything together. Feel free to add other spices, like chili powder or oregano, to customize the dish to your taste preferences.

Tips and Tricks for Pressure Cooker Perfection

Deglazing the Pot: Scraping the browned bits from the bottom of the pot after sautéing the onions adds depth of flavour to the dish. Don't skip this step!

Natural Pressure Release: Allowing the pressure to release naturally for 10 minutes ensures the chicken is cooked through and the rice is perfectly tender. This slow release of pressure also contributes to the overall texture of the dish.

Don't Overcook the Chicken: Overcooked chicken can be dry and tough. Ensure that the chicken is cooked through but still juicy and tender by checking its internal temperature.

Optional Toppings: Don't be afraid to experiment with toppings! Sour cream, guacamole, shredded cheese, cilantro, and even a squeeze of lime juice can elevate this dish to new heights.

Beyond the Basics: Variations and Adaptations

This recipe is so versatile, you can easily customize it to your own liking. Here are a few ideas to get you started:

  • Spicy it Up: Add a pinch of cayenne pepper or some chopped jalapeños for extra heat.
  • Vegetarian Option: Replace the chicken with black beans or chickpeas for a hearty vegetarian version.
  • Add Vegetables: Incorporate other vegetables like bell peppers, corn, or zucchini for added nutrients and flavour.
  • Different Grains: Experiment with different types of grains such as quinoa or farro for a nutritional twist.
  • Citrus Zing: Add a squeeze of lime or lemon juice at the end for a refreshing burst of citrus.

This Pressure Cooker Salsa Verde Chicken and Rice isn't just a recipe; it's a time-saver, a flavour explosion, and a testament to the power of simple ingredients transformed into a truly satisfying meal.
