Step-by-step

  • Steam the carrots, mushrooms, yellow squash, and zucchini for 5-8 minutes.
  • If making zoodles, add them to a colander and add salt, let them stand in the sink for at least 10 minutes to draw out some of the water. When ready, dry them with paper towels.
  • While the vegetables are steaming, heat some cooking fat, coconut milk (start with a 1/2 cup), salt and pepper over medium-high heat until boiling.
  • Turn down the heat to medium and add in the pesto and lemon juice, stir until well incorporated. Taste, and add seasoning as you like.
  • Bring the sauce to a simmer and add the zoodles and gently mix with tongs, cook for 1 to 2 minutes.
  • Next, add the spinach and cook until wilted.
  • Add the remaining vegetables and gently mix. Let the vegetables simmer in the sauce for a few minutes, just make sure they don’t overcook.
  • Serve while it’s warm.

My Go-To Weeknight Dinner: Creamy Pesto Vegetables

As a busy working mom, finding time to cook healthy and delicious meals can feel like a Herculean task. Between juggling work deadlines, school pick-ups, and the never-ending cycle of laundry, the thought of spending hours in the kitchen often leaves me feeling overwhelmed. That's why I'm always on the lookout for quick, easy, and nutritious recipes that the whole family will enjoy. This creamy pesto vegetable recipe has become a lifesaver, a true staple in our weekly meal rotation. It’s ready in under 30 minutes, packed with flavor, and surprisingly versatile.

The beauty of this dish lies in its simplicity. The vibrant green pesto sauce forms the heart of the recipe, its rich, nutty flavor perfectly complementing the sweetness of the vegetables. I typically use a store-bought pesto to save time, but feel free to whip up your own if you have a little extra time on your hands. The combination of zucchini, carrots, mushrooms, and yellow squash creates a delightful mix of textures and tastes. Adding spinach at the end adds a boost of nutrients and a lovely pop of color. And of course, a touch of lemon juice brightens up the whole dish, balancing the richness of the pesto and coconut milk.

What I truly love about this recipe is its adaptability. Feel free to experiment with different vegetables based on your preferences and what's in season. Asparagus, broccoli, peas—all are wonderful additions. One night I might add some grilled chicken or shrimp for extra protein. Another time, I'll serve it alongside a simple quinoa or brown rice for a more substantial meal. The possibilities are endless, making this recipe a fantastic blank canvas for your culinary creativity. The best part? Even my picky eaters gobble this up without complaint! It's become a family favorite, and a testament to the fact that healthy and delicious don't have to be mutually exclusive.

Tips and Variations:

  • Vegetable Variety: Don't be afraid to experiment! Add bell peppers, broccoli florets, or even roasted sweet potatoes for a different twist.
