Step-by-step

  • In the slow cooker, mix together the diced tomatoes and tomato paste
  • Add broth, beef or turkey, garlic, seasoning, onion, V8 and salt and pepper
  • Cook on low for 4-5 hours (you can simmer longer-it will just increase the intensity of the flavors)
  • 30 minutes before you are ready to serve, add the uncooked pasta and water if you like. I just tossed in the pasta and let it cook in the juices already in there. We don't really like "soupy" soup. :)
  • Sprinkle cheese on top before serving. Yum!

My Favorite Weeknight Crockpot Meal: Lasagna Soup

As a busy working mom, finding time to cook delicious and healthy meals can feel like a constant uphill battle. Between juggling work deadlines, school pick-ups, and all the other demands on my time, the last thing I want to do is spend hours in the kitchen. That's why I've become such a huge fan of crockpot recipes. They're my secret weapon for effortless weeknight dinners, and this Lasagna Soup is a perfect example.

This recipe is unbelievably simple. I typically prep it in the morning before heading to work, and by the time I get home, the house is filled with the comforting aroma of simmering spices and slow-cooked goodness. The best part? It requires minimal cleanup! The crockpot does all the hard work, leaving me with more time to spend with my family. I’ve found that using ground turkey keeps the soup lighter, but ground beef works perfectly well too. I sometimes add a little extra V8 juice if I want it a bit “soupier,” but my family prefers it on the thicker side.

Beyond the Recipe: Why This Soup is a Winner

This isn't just a quick and easy meal; it's versatile and adaptable to your preferences. For instance, you can easily adjust the amount of water to achieve your desired consistency. If you want a heartier soup, add more vegetables like zucchini or spinach during the last hour of cooking. Spice enthusiasts can add a pinch of red pepper flakes for a little kick. And for a vegetarian option, simply substitute the ground meat with lentils or mushrooms. The possibilities are endless!

I often find myself making a double batch on busy weeks. It’s fantastic for meal prepping – having leftovers on hand means one less meal to worry about throughout the week. The flavors deepen even more the next day, making it even tastier! I sometimes freeze portions for those extra hectic days when I really need a quick and nutritious meal.

More than Just a Meal: A Symbol of Effortless Comfort

This Lasagna Soup represents more than just a recipe to me; it’s a symbol of efficiency and comforting home-cooked goodness. It’s a testament to the idea that delicious meals don’t have to be complicated or time-consuming. It's a simple act of self-care in a busy life, proving that nourishing yourself and your family doesn't require sacrificing precious time or energy. It’s a perfect example of how even the busiest person can create warm, inviting meals with minimal fuss.

So, next time you find yourself overwhelmed by a hectic schedule, remember this Lasagna Soup. It’s a reminder that delicious, homemade meals are entirely within reach, even on the most challenging days. It’s a little bit of comfort, a lot of flavor, and a whole lot of convenience wrapped into one simple, satisfying dish.
