Step-by-step

  • Firstly I bashed the lemongrass with the back of a knife before thinly slicing it into thin rings.
  • I then thinly sliced the ginger (with skin on), thinly sliced the chilli, crushed the garlic with the skin still on.
  • I chucked all of this into a bowl with the lime zest and juice and gave it a bit of a mix.
  • I placed a large bit of tinfoil onto a roasting tray and placed the sea bass fillets into the middle.
  • I then poured the mixture from the bowl over the top.
  • Finally I made a little pouch around the fish and mixture using the tin foil, before cooking at 160 degrees for between 15 and 20 minutes (depending on the size of the fish).
  • While the fish was cooking, I boiled the new potatoes for around 20 minutes, before draining, halving and placing them back in the pan with the butter.
  • Finally I added served the fish and potato together and added a small amount of fresh coriander.

A Weeknight Winner: Thai-Inspired Sea Bass

As a busy working mum, finding time to cook delicious and healthy meals can feel like a Herculean task. Weeknights are often a blur of school pick-ups, homework battles, and the general chaos of family life. But even amidst the whirlwind, I still crave flavorful, satisfying dinners that don’t require hours in the kitchen. This Thai-inspired sea bass recipe became a lifesaver, a simple yet elegant dish that I can whip up in under an hour, even on my busiest days.

The inspiration struck when I spotted some beautifully fresh sea bass fillets on sale at the supermarket. Knowing I had a couple of nights child-free, I snapped them up, envisioning a quick and flavorful meal. I've always loved Thai cuisine's bright, zesty flavors, and this recipe perfectly captures those elements without demanding too much culinary prowess. The beauty of this dish lies in its simplicity: a fragrant marinade of lemongrass, ginger, chili, and lime infuses the sea bass with an explosion of taste. Wrapped in foil and baked, the fish cooks gently, retaining its moisture and developing a delicate, flaky texture. Paired with perfectly boiled new potatoes, seasoned with a touch of butter, it's a balanced and satisfying meal that nourishes both body and soul.

The best part? This recipe is incredibly adaptable. Feel free to experiment with different herbs and spices to tailor it to your taste. A sprinkle of fresh coriander adds a lovely finishing touch, enhancing the fresh, vibrant flavors of the dish. While I serve it with new potatoes, you could equally pair it with steamed rice or a simple green salad. This Thai-inspired sea bass is more than just a meal; it’s a reminder that even on the busiest of evenings, we can savor delicious, healthy food without sacrificing valuable family time.

Ingredients I used:

The beauty of this recipe is that it utilizes readily available, affordable ingredients, making it perfect for a budget-conscious weeknight meal. I managed to find everything I needed at my local supermarket.

  • Sea Bass Fillets: The star of the show! Look for fresh fillets, and don't be afraid to grab them on sale.
  • New Potatoes: Small, waxy potatoes are ideal for boiling and then adding butter after draining. They complement the fish beautifully.
  • Lemongrass: Provides a wonderful citrusy aroma and flavor. If you can’t find fresh, consider using a paste instead.
  • Ginger: Adds a warming, spicy note to the dish. I used fresh ginger, but you could substitute with ground ginger if needed.
  • Red Chili: Adds a touch of heat, feel free to adjust the amount to your preference. I prefer a moderate amount for a pleasant kick.
  • Garlic: A staple in many cuisines, it adds a subtle savory depth to the marinade.
  • Lime: The zest and juice of a lime create a bright, tangy flavor that cuts through the richness of the fish.
  • Fresh Coriander: Adds a refreshing, slightly peppery flavor to the final dish, enhancing the overall taste.
  • Butter: A small knob of butter tossed with the potatoes gives them a lovely richness.

Tips and Variations:

I find cooking is all about having fun and experimenting so feel free to try these out:

  • Spice it up: Add more chili or a pinch of red pepper flakes for extra heat.
  • Herb it up: Experiment with other herbs like cilantro or basil for a different flavor profile.
  • Make it a complete meal: Serve with steamed rice or a side salad for a more substantial meal.
  • Leftovers: This dish is equally delicious reheated, making it perfect for lunch the next day.

This simple Thai-inspired sea bass recipe has quickly become a staple in my weeknight dinner rotation. It's a testament to the fact that delicious, healthy meals don't have to be complicated or time-consuming. Even on the busiest of days, a little bit of culinary creativity can transform a simple ingredient into a culinary delight. Give it a try and let me know what you think!
