Quick Dinner Using Leftover Pork Tenderloin

I'm always looking for ways to use up leftovers. I came up with this one last night, and it was delicious served over wild rice. I would rather have used a can of tomatoes, but hubby won't eat a cooked tomato that he can actually see...oh well!

That's why I'm always on the lookout for recipes that are quick, easy, and utilize leftovers – because let's be honest, who has time for elaborate cooking every single night? This recipe for leftover pork tenderloin is my latest discovery, and it's a true lifesaver.

The beauty of this dish lies in its simplicity and versatility. It transforms humble leftover pork tenderloin into a flavorful and satisfying meal in a matter of minutes. I love how it's a perfect blend of savory and slightly sweet, thanks to the combination of white wine and tomato sauce. The subtle sweetness perfectly complements the richness of the pork, creating a harmonious taste experience that pleases even the pickiest eaters (even my husband, who has a notorious aversion to cooked tomatoes!). I usually serve it over wild rice, adding a delightful textural contrast to the tender pork. The wild rice’s nutty flavor and chewy texture create a satisfying pairing that is both elegant and filling.

But the best part? The clean-up is a breeze! The whole process takes less than 15 minutes, leaving me with plenty of time to focus on other aspects of my busy evening.
