Pot Roast When trying to stay on track with a Paleo lifestyle, those go-to, easy to make meals are a must! So, here is one of our favorites. This has been my go-to dish on lazy Sundays for a few years now. I love that I could prep it in minutes, toss it in the slow cooker and have a healthy meal ready for dinner. Ironically, now that I am a mama, these are much less lazy Sundays, but much more of super busy ones that don’t leave me much time to spend in the kitchen! I always brown my meats and saute my onions (and sometimes other vegetables) before placing them in the slow-cooker. This just adds some extra flavor. If you are in a hurry, you can always skip these steps and your roast will still be tender and juicy!

Step-by-step

  • Heat 1 tablespoon of ghee in a heavy bottomed pan. Saute onions until translucent.
  • Add garlic, carrots and celery and saute for a few minutes until fragrant. Move all vegetables into the slow-cooker.
  • Coat chuck roast with oregano, paprika and cumin. Salt and pepper generously.
  • Heat remaining tablespoon of ghee in the same pan. Brown roast on all sides – a few minutes per a side. Move to slow-cooker.
  • Add beef stock and slow cook on soup for 3-4 hours.
  • Salt and pepper before serving.
