Step-by-step

  • Wash and drain blueberries and strawberries. Slice strawberries into small slices.
  • In a small bowl, mix sugar free fat free cheesecake Jello mix with 1 1/2 cups skim milk. Using a whisk, whisk together for 2 minutes until pudding starts to thicken. Fold in Cool Whip Free topping into pudding mixture and stir for 1-2 minutes.
  • Slice up Angel Food Cake into small cubes. Using a trifle dish or large bowl, layer 1/3 Angel Food Cake cubes in the bottom of dish. Top Angel Food Cake with 1/3 blueberries. Add 1/3 Jello mixture on top of blueberries. (I used a plastic bag to pipe filling onto blueberries, just cut a small slit in the corner of bag after filling it with Jello filling.) Add 1/3 strawberry slices onto Jello mixture. Repeat all layers twice and top with additional blueberries and or strawberries.

Instant cheesecake pudding requires precise whisking duration to set properly without a gritty mouthfeel. When combining skim milk with the gelatin mixture, vigorous manual agitation for exactly two minutes activates the thickening agents before folding in whipped topping. Skipping this crucial phase yields a watery layer that dissolves the surrounding sponge cake.

Preventing Soggy Layers

Angel food cake absorbs surrounding moisture rapidly due to its open crumb structure. Constructing this dish more than four hours before serving causes the fruit juices and pudding to break down the cake into an unappealing paste. Piping the filling through a pastry bag or snipped plastic corner distributes the weight evenly without compressing the delicate crumb.

  • Slice strawberries into uniform quarter-inch pieces to distribute weight evenly across the tiers.
  • Refrigerate assembled portions at or below 40 degrees Fahrenheit if holding for more than two hours.
  • Adjust quantities by half for smaller yields while maintaining the 1:1 pudding-to-topping ratio.
