Step-by-step

  • Preheat oven to 200°C, place a racking rack on top of a baking tray
  • Cut the Jalapeno's in halve and remove the seeds and membrane, quarter the capsicum and remove the seeds and membrane
  • Using a mixer, beat the cream cheese, Parmesan cheese, Mozzarella cheese, Onion Powder, Garlic & Smoked Paprika.
  • Add some salt and pepper to taste.
  • Generously spoon the mixture into the jalapenos and capsicum
  • Wrap each stuffed jalapeno and capsicum with the bacon, I found the capsicums needed two pieces of bacon, secure them with a toothpick or skewer
  • Place the jalapeno and capsicums onto the baking tray and place in the oven for 25 to 30 minutes
