Step-by-step

  • Rinse the meat with cold water.

  • Reduce the heat to low (so that the water only simmers slightly), cover the pot and cook the meat for about 1 hour.
  • After an hour, add bay leaves, peppercorns, and allspice and cook for another half hour.
  • Meanwhile, prepare the vegetables.
  • Wash the vegetables.
  • Dice the carrots, parsley, and celery.
  • Sauté in 1 tablespoon of butter and 1 tablespoon of oil.
  • Set aside.
  • Cut the leek lengthwise in half or quarters and chop.
  • Sauté in a tablespoon of butter or oil until softened.
  • Set aside.
  • Peel the pickled cucumbers and grate them on a large-holed grater.
  • Press out the brine (but keep the brine).
  • Sauté the cucumbers in 2 tablespoons of butter for a few minutes.
  • Peel and dice the potatoes.
  • Set aside.
  • After 1.5 hours, remove the meat from the broth.
  • Let the meat cool.
  • Add the sautéed vegetables and a tablespoon of salt to the broth.
