Step-by-step

  • Bring 1/2 cup of water to a boil and stir in 1/4 cup of the uncooked quinoa.
  • Cover, turn the heat to low and cook until all the water is absorbed (about 15 minutes).
  • Set aside to let the quinoa cool.
  • Preheat your oven to 400 degrees and lightly grease a baking sheet with cooking spray.
  • Set aside
  • Place the remaining 1/4 cup of uncooked quinoa into a food processor and process until ground into a fine flour.
  • Pour the quinoa flour into a large, shallow plate.
  • Transfer the cooled, cooked quinoa into a large bowl and add in 1/4 cup of the grated Goat Cheese, the Italian seasoning, garlic powder, and season to taste with salt and pepper.
  • Mix well and pour into a large, shallow plate.
  • Pour the egg white into a large shallow plate.
  • Dredge each breast into the quinoa flour, pressing to get it evenly coated.
  • Then, transfer each breast into the egg white, also making sure to evenly coat it.
  • Finally, transfer the breasts into the cooked quinoa/cheese mixture, really making sure to coat each side. You will really have to press the quinoa in to make it stick.
  • Place the breasts onto the prepared baking sheet and lightly spray with cooking spray.
  • Bake until lightly golden brown and crispy, about 20-25 minutes.
  • Turn your oven to high broil, sprinkle the remaining 1/4 cup of grated cheese on the chicken and broil until melted, only about 2 minutes.
  • Garnish with sliced roasted red pepper and basil and DEVOUR

A Weeknight Winner: Goat Cheese and Quinoa Crusted Chicken

As a busy working mom, finding time to cook a healthy and delicious dinner can feel like a monumental task. But I'm here to tell you that it doesn't have to be! This Goat Cheese and Quinoa Crusted Chicken recipe is my go-to weeknight meal – it's quick, easy, and surprisingly elegant. The crispy quinoa crust adds a delightful texture, while the goat cheese provides a creamy, tangy counterpoint to the savory chicken. It's the perfect balance of flavors and textures that will satisfy even the pickiest eaters in your family (trust me, my kids devour it!).

The beauty of this recipe lies in its simplicity. You don't need any fancy ingredients or complicated techniques. I usually prep everything while the kids are doing homework or watching their favorite show, and the entire cooking process, from start to finish, takes less than an hour. This means more family time, less stress, and a delicious meal on the table, all without sacrificing nutrition or flavor. The quinoa adds a healthy boost of protein and fiber, making it a satisfying and guilt-free indulgence. And let's be honest, the crispy crust is almost too good to be true! I often find myself sneaking extra pieces after the kids have gone to bed…don't judge!

I've experimented with different variations of this recipe over the years, adding roasted vegetables or different herbs depending on what’s in season or what my family craves. Sometimes, I’ll swap the goat cheese for feta or even a sprinkle of parmesan for a slightly different flavor profile. The possibilities are endless! But the core of the recipe remains the same – a simple yet incredibly satisfying combination of chicken, quinoa, and goat cheese.

This recipe is more than just a meal; it's a testament to the fact that healthy, delicious food doesn't have to be complicated or time-consuming. It's a recipe that allows me to nourish my family while still having time to enjoy the other important things in life. So, try it out, and I guarantee it will become a regular fixture in your dinner rotation too!

Beyond the Plate:

This recipe is perfect for meal prepping. You can easily bake a larger batch and enjoy leftovers throughout the week. It's also a great dish to bring to a potluck or party – it’s visually appealing and incredibly flavorful. The creamy goat cheese and crispy quinoa crust make it a guaranteed crowd-pleaser. I've even been known to pack it for lunch – it travels well and tastes just as delicious cold!

Variations and Substitutions:

While I love the combination of goat cheese and Italian seasoning, you can easily experiment with different cheeses and herbs. Feel free to substitute the goat cheese with feta, parmesan, or even a blend of your favorite cheeses. Experiment with different herbs like rosemary, thyme, or oregano to create unique flavor profiles. You can also add other vegetables to the quinoa mixture, such as chopped bell peppers, zucchini, or spinach.

A Taste of Home:

For me, this recipe is more than just a simple weeknight dinner; it’s a reminder of simpler times and home-cooked meals shared with loved ones. The aroma of baking chicken, the satisfying crunch of the quinoa crust, and the comforting taste of goat cheese evoke memories of family gatherings and Sunday dinners. It’s a taste of home, a reminder of the importance of simple pleasures, and a testament to the power of food to bring people together.

So, go ahead and give this recipe a try. I have a feeling it'll quickly become a family favorite, just like it is in my house. Happy cooking!
