Step-by-step

  • In a large bowl beat the eggs and then add the salmon. Use a fork to break up the large chunks. Add the almond flour, salt and pepper. Mix to combine.
  • Heat 2 teaspoons of oil over medium heat. Lightly sauté the onions, peppers, and celery for about 5 minutes, or until slightly soft. Add the garlic and herbs and sauté for another minute or so. (You can totally skip this step. Your salmon patties will just have a little more of a crunch to them.)
  • Remove pan from heat and allow to cool slightly.
  • Add the sautéed veggies and herbs to the salmon mixture. Mix thoroughly.
  • Shape into 9 or 10 patties. (At this point, if you want to freeze any patties, place them on a small baking sheet and place in the freezer. Once frozen, place them in a freezer bag.)
  • Heat a skillet over medium heat and add the oil. Once hot, heat the patties on each side for about 4-6 minutes, or until golden brown. Transfer to a paper towel lined plate. You should be able to cook 4 or 5 patties at a time. If you only make half of the patties, cut the oil down to 2 tablespoons.
  • To make the yogurt dill sauce, combine all of the ingredients in a small bowl and mix thoroughly.
  • Chill for at least 30 minutes before serving.
  • Serve the patties with the yogurt dill sauce.
Salmon Patties with Creamy Yogurt Dill Sauce: A Weeknight Winner

Salmon Patties with Creamy Yogurt Dill Sauce: A Weeknight Winner

As a busy working mom, finding time to cook healthy and delicious meals can feel like a Herculean task. Between school pick-ups, after-school activities, and the endless to-do list, whipping up something from scratch often feels impossible. That's why I'm always on the lookout for recipes that are both quick and nutritious. This Salmon Patties with Creamy Yogurt Dill Sauce recipe has become a staple in our house, a true weeknight lifesaver.

The beauty of this dish lies in its simplicity. It requires minimal prep time, and the ingredients are readily available at most grocery stores. I love that I can often use up leftover cooked salmon (a great way to reduce food waste!), making it even more convenient. The salmon patties themselves are incredibly versatile. You can adjust the seasonings to your liking, adding different herbs or spices for a unique flavor profile each time. Sometimes I'll sneak in some finely chopped red bell peppers for an extra pop of color and sweetness, other times I stick to classic onion and celery.

The creamy yogurt dill sauce is the perfect complement to the savory salmon patties. It's light, refreshing, and adds a delightful tanginess that balances the richness of the salmon beautifully. It's incredibly easy to make, too – simply whisk together Greek yogurt, fresh dill, lemon juice, and a touch of Dijon mustard. The longer it chills, the more the flavors meld together, creating a harmonious and intensely flavorful sauce.

Beyond its convenience, this recipe is packed with healthy ingredients. Salmon is a fantastic source of protein and omega-3 fatty acids, essential for brain health and overall well-being. Greek yogurt is a powerhouse of protein and probiotics, beneficial for gut health. And the fresh dill and lemon juice add a burst of flavor and essential vitamins.

This recipe isn't just for busy weeknights. It's also perfect for meal prepping. I often double the recipe and freeze half of the patties for a quick and easy lunch or dinner on a busier day. Simply reheat them in a pan or microwave, and they taste just as delicious as when they were freshly made. I've even served these patties to friends at casual gatherings, and they've always been a hit, proving that healthy and delicious can go hand in hand.

Tips and Variations:

  • Customize your veggies: Feel free to experiment with different vegetables in the patties. Zucchini, carrots, or even spinach would all be delicious additions.
  • Spice it up: Add a pinch of red pepper flakes to the patties for a little kick.
  • Make it gluten-free: Ensure you use certified gluten-free almond flour.
  • Add some crunch: Top the patties with some toasted breadcrumbs or chopped nuts before serving.
  • Serve it differently: These patties are also delicious served in lettuce wraps or on top of a bed of greens.

This Salmon Patties with Creamy Yogurt Dill Sauce recipe is a true testament to the fact that healthy eating doesn't have to be complicated or time-consuming. It's a simple, yet incredibly satisfying meal that's sure to become a family favorite. So, next time you're short on time but craving a healthy and delicious dinner, give this recipe a try.
