Easy Crock Pot Teriyaki Chicken

From the "Fix it and Forget It" cookbook of crockpot recipes. Turns out with little effort. We enjoy it served over rice, with a salad on the side. I also use jarred ground ginger and jarred minced garlic--comes out just as well. I often double the sauce ingredients that go on top of the chicken--if you like it with more sauce, I suggest you do this. I also use low-sodium soy sauce, otherwise it will be really salty.

Step-by-step

  • Wash and dry chicken.
  • Place in slow cooker.
  • Combine remaining ingredients.
  • Pour over chicken.
  • Cover. Cook on high 1 hour.
  • Reduce heat to low cook 6-7 hours. (Again I wanted to start this in the morning and have it for dinner that evening so I cooked it only on low for about 9 hrs and it turned out perfectly--fall off the bone tender. I think you can adjust times as you see fit.)

Easy Crock Pot Teriyaki Chicken: A Busy Woman's Best Friend

As a working mom, time is my most precious commodity. Between juggling work deadlines, school pick-ups, and keeping the family fed, finding time to cook a healthy and delicious meal often feels like an impossible task. That's where my trusty crockpot comes in. This Easy Crock Pot Teriyaki Chicken recipe is a lifesaver, offering a flavorful and satisfying meal with minimal effort. I discovered this gem years ago in a well-worn cookbook – honestly, I don't even remember the title anymore, it's so dog-eared and stained from years of use. This recipe has become a staple in our household, frequently appearing on our dinner rotation.

The beauty of this recipe lies in its simplicity. The ingredients are basic, readily available in any grocery store, and the cooking process is incredibly straightforward. I often prep the ingredients the night before, making it an even quicker task in the morning. Toss everything into the crockpot before heading off to work, and by dinnertime, you'll have perfectly tender, juicy chicken that practically falls off the bone. The teriyaki sauce is rich and flavorful, offering a delightful balance of sweet and savory notes. We usually serve this over fluffy white rice, adding a simple side salad for a complete and balanced meal. The kids love it, my husband loves it, and even I admit it’s incredibly satisfying after a long day. It's the kind of recipe that makes you feel accomplished without taking all day to make.

One of the things I love about this recipe is its flexibility. While the recipe provides guidelines, I often adjust it based on my preferences and what's on hand. Sometimes I add extra ginger for a more pronounced flavor, or I use a different type of soy sauce. The beauty is, it always works out! I’ve even been known to throw in some extra vegetables, like sliced carrots or bell peppers, for added nutrients and a vibrant pop of color. The key is to experiment and find what works best for your taste buds. Don't be afraid to make it your own.

This recipe is more than just a dinner; it’s a reminder that even the busiest of individuals can make time for healthy and delicious home-cooked meals. It's a small act of self-care, a way to nourish not only my family but myself. The aroma alone that wafts from the crockpot throughout the day is enough to lift my spirits after a stressful workday. And the smiles on my family's faces when they bite into that perfectly tender chicken, well, that's the best reward of all.

Tips and variations:

  • Double the sauce: If you prefer a richer, saucier dish, feel free to double the sauce ingredients.
  • Add vegetables: Consider adding sliced carrots, bell peppers, or broccoli for a more complete meal.
  • Use different cuts of chicken: While chicken thighs are recommended for their tenderness, you can experiment with other cuts, like chicken breasts. Adjust the cooking time accordingly.
  • Make it spicier: Add a pinch of red pepper flakes or a dash of sriracha for a kick.
  • Serve it differently: While rice is a classic pairing, this teriyaki chicken is also delicious served with noodles, quinoa, or even cauliflower rice.

This Easy Crock Pot Teriyaki Chicken recipe is a testament to the power of simplicity and the importance of nourishing yourself and your loved ones, even when time is short. So, next time you’re feeling overwhelmed, remember this recipe—it’s your secret weapon to a delicious and stress-free weeknight dinner.
