Step-by-step

  • Chop the fresh rosemary (1 teaspoon), fresh parsley (2 tablespoons), yellow onion (1), and finely slice the red chili pepper (2).
  • Mince the garlic (2 cloves).
  • Preheat oven to 400 degrees F (200 degrees C).
  • Slice the chicken breast (1.5 pounds) and cut the Spanish chorizo (8 ounces).
  • Heat half of the olive oil (2 tablespoons) in an oven-proof skillet.
  • Cook the smoked chorizo while stirring, over high heat, until browned, for about 2 minutes. Transfer to a plate and set aside.
  • Season chicken breasts with kosher salt (1 teaspoon) and ground black pepper (to taste).
  • Add remaining olive oil to skillet.
  • Add chicken and sear on all sides, about 2 minutes total. Remove to a plate.
  • Lower heat to medium-low, add the onion and cook, stirring, until the onion softens, 3-4 minutes.
  • Add the garlic and rosemary and cook, stirring, until fragrant, about 30 seconds.
  • Add saffron threads (1 pinch), Arborio rice (2 cups), smoked paprika (1 teaspoon), tomato (14.5 ounces) and remaining kosher salt (1 teaspoon).
  • Stir everything just to combine.
  • Pour low-sodium chicken stock (3 cups) over the mixture.
  • Add the chicken breast and chorizo evenly around the pan, pushing them down into the rice so just their tops are showing.
  • Remove from heat and transfer the skillet to the oven.
  • Cook for 8 minutes, uncovered.
  • Remove pan from the oven.
  • Decorate the top with strips of the red pepper and shrimp (12).
  • Sprinkle with salt and smoked paprika (1 teaspoon).
  • Return the skillet to the oven. Then cook for 8-10 minutes longer, until shrimp and chicken are cooked through.
  • Remove from oven and sprinkle with fresh parsley.
  • Serve hot.
