Step-by-step

  • Break up 1 of the chocolate bars and melt over LOW heat in a small pot. While its starting to melt, make sure you stir frequently.
  • Once its just about melted, pull off the heat and keep stirring until the last of the pieces melt down.
  • Spoon the melted chocolate into your silicone molds.
  • Place in the freezer until it hardens.
  • Meanwhile, in a small bowl, stir together the protein powder and 1 Tbsp milk.
  • Once its the consistency of a paste, add the other tablespoon of milk.
  • Add the stevia drops.
  • Mixture will be runny.
  • To the protein mixture, add your peanut butter. You'll want the peanut butter to be room temp, or it will be hard to mix it (also depends on the brand, I find some easier to stir than others).
  • Once the chocolate has hardened in the silicone molds, pull them out of the freezer, and using a teaspoon measuring spoon, place 1 tsp of the peanut butter mixture on each of the chocolate cups.
  • Press down so it covers the whole surface of the chocolate.
  • Then, melt the other bar of chocolate, and once melted, spoon on top of the peanut butter mixture.
  • Return to the freezer and allow to fully harden (at least an hour).
  • Best stored in the freezer, and can be eaten directly from the freezer.
Sugar-Free Peanut Butter Cups: A Healthier Indulgence

My Sweet Escape: Sugar-Free Peanut Butter Cups

As a busy fitness model, finding healthy treats that satisfy my sweet tooth without derailing my progress is a constant quest. Let me tell you, it's a challenge! Most "healthy" alternatives fall short, either tasting bland or suspiciously artificial. That's why I'm so excited to share this recipe for sugar-free peanut butter cups – a guilt-free indulgence that actually tastes amazing. Forget those overly-sweet, processed alternatives; these homemade cups are the perfect blend of rich, creamy peanut butter and decadent dark chocolate, without any of the sugar crash or the remorse.

The best part? These are incredibly easy to make. Seriously, even on my busiest days, when I'm juggling photo shoots, training sessions, and meal prep, I can whip up a batch of these in no time. The simplicity of the ingredients and the straightforward instructions make them perfect for a quick treat or a thoughtful, homemade gift for friends who also appreciate a delicious, healthy option. They are also perfect for those days when you need a small moment of peace in a hectic day, something sweet and rewarding to look forward to.

The recipe itself is surprisingly flexible. You can experiment with different types of protein powder to achieve your preferred taste and texture – vanilla, chocolate, or even unflavored all work exceptionally well. The same goes for the peanut butter; smooth or crunchy, it's entirely up to your preference. I often use almond milk as a substitute for regular milk, as I find it complements the flavors better, but feel free to experiment with other options like oat milk or soy milk. You can even adjust the sweetness by adding a few more or fewer stevia drops, depending on your liking. The flexibility is what makes this recipe so versatile and fun to adapt to your personal taste.

Beyond the recipe: I find that making these cups is more than just creating a delicious snack; it's a meditative process. The rhythmic stirring of the chocolate, the careful layering of the ingredients, the satisfying click of the molds snapping shut in the freezer… it all provides a welcome break from the hustle and bustle of daily life. It's a mindful activity that helps me disconnect and reconnect with myself, which is incredibly important for maintaining a healthy work-life balance.

Whether you're a fellow fitness enthusiast, a busy professional, or simply someone who appreciates a decadent yet healthy treat, give these sugar-free peanut butter cups a try. They're sure to become a new favorite in your recipe repertoire. And, the best part? The satisfied feeling you get from knowing you're indulging without the guilt.

Pro-tip: These cups are best stored in the freezer, and they are absolutely divine straight from frozen. The cold chocolate and the creamy peanut butter create a delightful textural contrast that is both refreshing and decadent.
