Step-by-step

  • Preheat your oven to 325 degrees F.
  • In a large mixing bowl or stand mixer, combine the egg, egg whites and stevia and mix until fluffy.
  • Add in the pumpkin, cocoa powder and almond milk, and mix until it resembled a pudding of sorts.
  • Next add the oat flour and whey protein and mix until well combined with no lumps.
  • Lightly mist an 8x8 or 9x9 oven proof pan or dish.
  • Pour the brownie mixture in, and smooth it out so it's even.
  • Bake for approx. 25 minutes until it's cooked through. It will still appear a bit wet, and a toothpick won't come clean.
  • When the brownies come out of the oven, immediately sprinkle the chocolate chips on top.
  • Set it aside for 3-4 minutes, then with a knife, spread the melted chocolate all over the brownies.
  • Allow to cool, and cut into 16 squares.
  • Keep stored in the fridge in a sealed container and consume within 4-5 days. Can also be frozen, but will need to be thawed before eating.

Pumpkin Brownies: A Busy Mom's Guilt-Free Indulgence

Life as a working mom is a whirlwind. Between juggling work deadlines, school runs, and keeping the house somewhat tidy, finding time for anything, let alone baking, feels like a luxury. But let's be honest, we all deserve a little treat now and then. That’s where these pumpkin brownies come in. They're quick, easy, and surprisingly healthy, making them the perfect guilt-free indulgence for a busy mom like me.

I stumbled upon this recipe while searching for a healthier alternative to my usual afternoon slump-buster. I'm always on the lookout for recipes that are both delicious and fit within my family’s dietary needs. This recipe ticked all the boxes. The pumpkin adds a wonderful moistness and subtle sweetness, while the cocoa powder provides that rich, decadent brownie flavor we all crave. And the best part? I can feel good about sneaking a (or two!) squares without derailing my healthy eating goals.

The ingredients are simple and readily available in most grocery stores. I love that I can easily adapt the recipe based on what I already have on hand. Sometimes I use regular milk instead of almond milk, and if I'm out of oat flour, I’ll substitute with whole wheat flour. The recipe is remarkably forgiving! The process itself is straightforward and doesn't require any fancy baking techniques. Even my kids can help with the mixing, which is a bonus on busy weekday afternoons.

These brownies are perfect for a quick after-school snack, a satisfying end-of-day treat, or even a healthy addition to a weekend brunch spread. They're versatile enough to be enjoyed on their own or paired with a dollop of Greek yogurt or a scoop of your favorite ice cream (though I usually resist the urge for the latter!). I often package a few squares for my daughter's lunchbox - they're a great alternative to processed snacks and help keep her energy levels up throughout the day.

Beyond their convenience and deliciousness, these pumpkin brownies are a source of comfort and connection in our busy household. The simple act of baking, even a quick one, allows me to unwind and focus on something other than the never-ending to-do list. The aroma filling the kitchen as they bake creates a warm, inviting atmosphere, and sharing them with my family is a small moment of shared joy in our hectic lives.

So, if you’re a busy mom (or just someone who appreciates a delicious and easy dessert), I highly recommend giving this recipe a try. It's a small act of self-care that yields big rewards – both in taste and in the feeling of accomplishment that comes from creating something delicious from scratch, even amidst the chaos.

Pro Tip: To make these brownies even more decadent, you could add a pinch of cinnamon or nutmeg to the batter for a warm, autumnal twist. You could also experiment with different types of chocolate chips – dark chocolate, milk chocolate, or even white chocolate chips would work well.
