Step-by-step

  • Mix milk, cream and yoghurt and leave it for about 5 minute.
  • Mix flour, baking powder, sugar and salt
  • Melt the butter, break the eggs .
  • Add all the wet ingredient together.
  • Make a well in the center of the flour mix and gently stir in wet ingredients. DO NOT OVER MIX.
  • Now rest the pancake in the fridge and let's do the syrup.
  • On a medium heat, mix orange juice and syrup in the sauce pan , keep stirring for about 3-4 minutes, keep warm.
  • Now it is time to assemble everything , use the yellow pancake ring to make pancake , brush the non- stick pan well with butter, use 1/3 cup for one pancake. This batch will make about 9 giant pancake. Read note belows;
  • Keep pancake warm in the heat oven of 120 C or the warming drawer.
  • The sausage is fry on medium high heat , pure a good splash of vegetable oil on the pan and use tong to turn it often.
  • To serve, arrange 2 pancakes and 1 veal sauce per serving , put extra soften butter on each pancake , dust powdered sugar on and serve the syrup in a saperate small jug or ramekins. Enjoy this divine pancake dish ;)

Swapping whole milk for skim will immediately deflate the batter because lower fat content weakens the emulsion needed for trapping leavening gases. Countless attempts at towering breakfast cakes reveal that exact ratios matter immensely. Acidic components like yogurt interact with generous amounts of baking powder to create initial lift before heat hits the pan. Ignoring this chemical reaction produces flat discs instead of airy rounds.

Equipment Demands and Thermal Control

Specific gear determines success here. A standard non-stick skillet works, but stainless steel causes sticking unless properly seasoned. Yellow pancake rings provide structural containment for giant batter portions, preventing spreading. Maintain a precise oven temperature of 120 degrees Celsius to hold finished rounds without drying them out. Panfry the veal sausages over medium-high heat using a vegetable oil splash, turning constantly with tongs to ensure even rendering of fat.

Batch cooking requires strategic holding methods. Leftover components can be frozen after cooling completely on wire racks, then reheated directly in a toaster oven at 180 degrees Celsius for five minutes to restore crisp edges.

  • Resting the batter in the refrigerator relaxes gluten strands, yielding a tender crumb.
  • Simmering the orange juice and maple syrup reduction for three to four minutes thickens the liquid properly.
  • Brush the skillet thoroughly with butter between every single batch to promote golden browning.
