Step-by-step

  • Remove the lining from the bottom side of the ribs by running a butter knife under the skin and then using a paper towel to grip and remove completely.
  • Combine the brown sugar, chili powder, parsley, salt, pepper, cumin, garlic powder, onion powder and cayenne pepper in a small dish and rub all over the ribs.
  • Place the rack in your pressure cooker and place the ribs inside the pot, standing on their side, wrapping around the inside of the pot. Pour in the water, apple cider and liquid smoke (if using), being careful to not wash off any of the seasonings.
  • Secure the lid, making sure the vent is closed. Press the Meat button and set to 25 minutes. Let the pressure naturally release for 10 minutes, then quick release the rest of the way.
  • Carefully remove the ribs from the pressure cooker and set on a foil lined baking sheet. Brush down with your favorite BBQ sauce, and pop under the broiler for 5 minutes, but keep an eye on it so it doesn't burn (some ovens are more hot than others).
  • Enjoy!
Instant Pot Baby Back Pork Ribs: A Busy Mom's Secret Weapon

Instant Pot Baby Back Pork Ribs: A Busy Mom's Secret Weapon

Life as a working mom is a whirlwind. Between school drop-offs, endless meetings, and trying to keep the house from falling apart, finding time to cook a delicious, healthy meal often feels impossible. That's where my Instant Pot comes in. It's become my secret weapon in the kitchen, saving me precious time and delivering amazing results, and these Instant Pot Baby Back Pork Ribs are a prime example.

I used to dread making ribs. The long hours of slow cooking, the constant monitoring – it felt like a monumental task. But this recipe changed everything. The Instant Pot dramatically reduces the cooking time, while still producing incredibly tender, fall-off-the-bone ribs. This means more time with my family, less time slaving away in the kitchen. And honestly, the taste? It's phenomenal. My kids clean their plates every time, and even my husband, who usually prefers takeout, raves about these ribs.

The beauty of this recipe lies in its simplicity. The ingredient list is straightforward – things I usually have on hand. The preparation is minimal, and the Instant Pot does most of the work. I usually start the ribs in the morning before work. By the time I get home, they're practically ready. A quick broil under the BBQ sauce and dinner is served! It's perfect for a weeknight meal when time is of the essence.

Beyond the Weeknight Wonder: These ribs are also incredibly versatile. They're fantastic for game day, potlucks, or even a casual weekend dinner. I've even been known to make a double batch and freeze half for a future meal – a huge time saver when things get particularly hectic. The flavor is rich and satisfying, a delicious combination of smoky and sweet, that everyone in my family enjoys. And yes, even picky eaters are converted!

Tips and Tricks from a Busy Mom's Kitchen:

  • Prep Ahead: You can marinate the ribs overnight for even deeper flavor. Just store them in the refrigerator until you're ready to cook them.
  • Adjust the Spice: Feel free to adjust the spice level to your liking. If you prefer a milder flavor, reduce the amount of cayenne pepper or omit it entirely.
  • Get Creative with the Sauce: Don't be afraid to experiment with different BBQ sauces. My personal favorite is a classic hickory-smoked sauce, but feel free to try your favorite brand or even make your own from scratch.
  • Make it a Meal: Serve these ribs with classic sides like coleslaw, baked beans, corn on the cob, or potato salad for a complete and satisfying meal.
  • Leftovers are a Blessing: The leftovers are just as delicious as the original dish. They're perfect for sandwiches, salads, or even just enjoyed cold.

This Instant Pot Baby Back Pork Ribs recipe has become a staple in my busy household. It’s a testament to how delicious and effortless cooking can be, even when you're juggling a million things. So, if you're a busy mom, a working professional, or simply someone who appreciates a quick and flavorful meal, give this recipe a try. You won't be disappointed!
