Step-by-step

  • Prepare cake mix for cupcakes as directed on the box.
  • Allow to cool completely (or place in the freezer for 5 minutes).
  • In the meantime, boil one cup of water and dissolve the Jello.
  • Once completely dissolved, add one cup of cold water.
  • Using a fork or the end of a wooden spoon, poke holes in the top of the cupcakes.
  • Take a tablespoon and gently drizzle raspberry Jello over the top of the cooled, poked cupcakes. (Amount needed may vary.)
  • Refrigerate for 2 to 3 hours or until the Jello has set.
  • Top with whipped topping and coconut if desired.
