Step-by-step

  • Preheat oven to 350 degrees.
  • Line an 8 x 12 baking dish with parchment paper.
  • In a large bowl, or in the bowl of a stand mixer, add butter and sugar and beat together on medium speed until well blended and creamy.
  • Add eggs and beat until light and fluffy.
  • In a medium sized bowl stir together oats and oat flour, baking soda and salt.
  • Add oat mixture to butter and eggs mixture and beat together until well combined and it has formed a sticky dough.
  • Reserve ⅓ of the dough and set aside.
  • Press the remaining dough into the bottom of the baking dish. Dampen your hands with a bit of water to help press the dough flat into the baking dish. This is sticky dough. Press the dough slightly up the sides of the dish to make a bit of a ridge to catch the fudge topping.
  • To make the fudge: in a small sauce pan combine Eagle Brand condensed milk and chocolate chips over medium low heat.
  • Stir until chocolate chips have melted and mixture is smooth and creamy.
  • Remove from heat and stir in the tablespoon of butter and the vanilla.
  • Evenly spread the fudge over top of the dough in the baking dish. Try to leave a half inch or so around the sides.
  • Take small clumps of the dough previously set aside and press into flat shapes and lay on top of the fudge. Don't worry about covering the entire top, you want to see some fudge peaking through.
  • Bake at 350 for 20-22 minutes. The oats on top should be slightly golden brown.
  • Remove from the oven and allow to cool before cutting into squares.

My Easy Gluten-Free Oat Fudge Bars

As a busy working mom, finding time to bake is a luxury, not a given. But sometimes, you crave that sweet treat, that comforting taste of homemade goodness. That's where these Oat Fudge Bars come in. They’re simple, quick to make, and incredibly satisfying. The best part? They're gluten-free, making them a treat everyone can enjoy. This recipe was a lifesaver for my daughter's recent school bake sale – it was so easy, even she helped out with some steps, and the kids absolutely devoured them! I’ve adapted several recipes over the years and perfected this one, making it foolproof for even the most novice bakers.

The beauty of these bars lies in their simplicity. No complicated techniques, no obscure ingredients—just a straightforward process that yields deliciously fudgy, chewy, and perfectly sweet treats. I love how the oat base provides a lovely texture, a pleasant contrast to the smooth, melt-in-your-mouth fudge topping. The combination of brown and white sugar enhances the flavor profile, adding depth and preventing it from being overly sweet. The recipe is easily adaptable, too. Feel free to experiment with different types of chocolate chips, nuts, or even dried fruits for added texture and flavor. I've tried adding chopped pecans before and they added a lovely crunch.

These Oat Fudge Bars are more than just a recipe; they're a testament to the power of simple, delicious baking. They're perfect for satisfying a sweet craving, sharing with friends and family, or taking to potlucks and gatherings. They transport you back to simpler times, to childhood memories of warm cookies and happy gatherings. The wonderful aroma that fills your home while baking adds to the overall charm. Honestly, the ease of making them is nearly as satisfying as eating them. Give this recipe a try, and let me know what you think! You might find yourself making these again and again!

Beyond the Recipe: Beyond the simple pleasure of baking, these bars also represent a commitment to making healthier choices. By using gluten-free oat flour, we can ensure that everyone, regardless of dietary restrictions, can enjoy these delicious treats. The whole process allows me to connect with my family, working together and sharing in the joy of creating something delicious. It is a wonderful way to spend time together and the shared experience of baking makes the final product even more meaningful.

Tips and Tricks: For the perfect fudge topping, ensure that the condensed milk and chocolate chips are completely melted and smooth. Don't rush the process; low and slow is the key here. Also, make sure to press the dough evenly into the baking dish to create a uniform base. A lightly greased baking dish helps prevent sticking. If you are using regular flour, instead of oat flour, make sure to adjust the amount for the best results. Once baked, let the bars cool completely before cutting into squares to prevent them from crumbling. This allows the bars to set properly and creates cleaner, neater squares. Store leftover bars in an airtight container at room temperature for up to a week. You could also store them in the freezer for longer shelf life. If freezing them, make sure to wrap the bars tightly in plastic wrap before freezing.

Serving Suggestions: Serve these Oat Fudge Bars warm with a scoop of vanilla ice cream for a truly decadent treat. They also pair well with a cup of coffee or tea, making them a perfect afternoon snack or dessert. Try experimenting with different flavor combinations – a splash of espresso powder in the fudge, or a swirl of peanut butter in the oat base. The possibilities are endless! The bars can be cut into smaller or larger squares, depending on your preference and the occasion. They make excellent party favors or gifts too, especially during the holidays!

Making these bars is a rewarding experience, combining the joy of baking with the satisfaction of creating a delicious, shareable treat. The entire process is rather quick, so it's a great option for when you need a dessert in a hurry, or when you want something delicious and relatively easy to make. It is a testament to the idea that sometimes, the simplest recipes are the most satisfying. I hope you enjoy them as much as my family does!
