Step-by-step

  • Cut the tops off of peppers and remove + discard the seeds. From the cut off tops remove and discard the tail and chop the tops (nothing goes to waste). Set aside.
  • In a large mixing bowl, add ground turkey, uncooked quinoa, soy sauce, oregano, thyme, basil, salt, red pepper flakes, and ground black pepper.
  • On Instant Pot, press Sauté and preheat until it says Hot. Swirl oil to coat, add onion and sauté for 2-3 minutes, stirring occasionally. Add chopped pepper pieces and sauté for another 3-4 minutes. Press Cancel and transfer sautéed veggies to the bowl with other ingredients.
  • Using a spatula, mix all ingredients really well. Stuff the peppers dividing the filling between them equally.
  • In an Instant Pot, add water and place the rack inside. Arrange 1 layer of peppers and top with half of the tomato sauce. Lay remaining peppers and top with remaining sauce.
  • Close the lid, turn release vent to Sealing and press Pressure Cooking for 15 minutes on High.
  • After peppers are cooked, turn the valve to Quick Release and release the pressure.
  • Serve with plain yogurt and juices from the bottom of the pot (turkey baster is the best to suck those up).

As a busy mom of three, time is my most precious commodity. Dinner prep needs to be quick, easy, and preferably something the whole family will enjoy. That's why I've fallen head over heels for this Instant Pot Stuffed Peppers recipe. Forget hours of chopping and simmering – this dish is ready in under 30 minutes, leaving me with more time for bedtime stories and less time stressing over dinner. The best part? It's incredibly versatile. I've used ground beef, chicken, and even vegetarian crumbles in the past, and each time, it's been a hit.

The beauty of this recipe lies in its simplicity. No fancy ingredients or culinary skills required. Just a handful of pantry staples and some colorful bell peppers, and you're good to go. The Instant Pot does all the heavy lifting, resulting in perfectly tender peppers filled with a flavorful and satisfying mixture of ground turkey and quinoa. The quinoa adds a lovely nutty flavor and a boost of protein, making this a complete and healthy meal. I often serve it with a dollop of plain Greek yogurt for extra creaminess and a tangy counterpoint to the richness of the filling. This dish isn't just a quick weeknight meal; it’s also freezer-friendly. I often double the recipe and freeze half for those nights when even 30 minutes feels too long.

Tips and Variations:

  • Spice it up: Add a pinch of cayenne pepper or a dash of your favorite hot sauce to the filling for an extra kick.
  • Cheese please: Sprinkle some shredded cheddar or mozzarella cheese over the peppers before pressure cooking for an extra cheesy goodness.
  • Veggie boost: Add diced zucchini, carrots, or mushrooms to the filling for added nutrients and flavor.
  • Make it a meal prep wonder: Prepare the filling ahead of time and store it in the refrigerator until you're ready to stuff and cook the peppers.
  • Leftovers are a blessing: The leftover stuffed peppers are just as delicious cold and make a perfect lunch or snack the following day.
