Step-by-step

Standard mixing methods fail when dense chocolate drops meet a butter-and-egg emulsion, requiring a specific inversion technique to prevent a heavy bottom crust. Heavy chocolate pieces inevitably sink through liquid batter during baking unless gravity is physically countered after the pan emerges from the oven. Inverting the cooled cake redistributes the sunken solids evenly throughout the crumb.

Creaming softened butter with granulated sugar incorporates microscopic air pockets that chemical leaveners later expand. Milk and unsweetened cream provide the hydration necessary to dissolve sugar crystals completely before flour enters the bowl. Overbeating the batter once the flour is added activates excessive gluten networks, yielding a rubbery interior rather than a tender crumb. Stop mixing the moment dry streaks disappear.

Mint syrup introduces high amounts of simple sugars and water simultaneously, which alters the liquid ratio of the batter and produces a vibrant green hue alongside cooling flavor notes. Dark chocolate drops contribute bitter cocoa solids that cut through the sweetness of the syrup. Balancing these opposing profiles relies on precise temperature control during the baking phase.

Maintain the oven at precisely 180 degrees Celsius to ensure the chemical leavening agents activate before the outer crust sets too quickly. Tent the surface with aluminum foil at the twenty-minute mark if browning accelerates prematurely. Bake for thirty-five to forty minutes until a wooden skewer inserted into the center emerges completely clean without wet crumbs.
