Step-by-step

  • Season the chicken with salt, pepper, sweet smoked paprika, Spanish smoked paprika and garlic powder. Covered and refrigerate for half hour.
  • Heat up the ghee or oil in an oven-proof skillet, add chicken skin side down and brown on each side for about 4 minutes.
  • Once the chicken is browned remove it from the skillet and set aside. Discard all but one tablespoon of the oil.
  • Add chopped onions to the skillet. Cook them until translucent for about 5 minutes.
  • In the meantime heat up chicken stock in a separate pot, add saffron threads and let them steep and heat up the oven to 450 degrees F.
  • Once the onions are cooked add garlic and cook for one minute.
  • Add rice and stir to combine.
  • Add the stock, mix everything together, place the chicken on top of the rice, skin side up and transfer the skillet to the oven.
  • Bake in the oven for 25-30 minutes until the rice absorbs all the liquid and the chicken is cooked through (internal temperature is 165F).
  • Take the skillet from the oven and add peas and olives into the rice. Mix gently so the peas are covered and will cook in the rice. Cover and wait about 10 minutes.
  • Sprinkle parsley and serve. Enjoy.

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and, most importantly, delicious. That’s why I’ve fallen head over heels for this one-pot chicken and saffron rice recipe. It's a lifesaver on those hectic weeknights when I simply don’t have the energy for a multi-step culinary adventure. Forget spending hours slaving over a hot stove – this dish practically cooks itself in the oven! The fragrant saffron threads infuse the rice with a subtle, luxurious flavor that elevates this simple meal to something truly special. The combination of tender chicken, vibrant saffron, salty olives, and sweet peas creates a harmonious blend of textures and tastes that my whole family adores.

The beauty of this recipe lies in its simplicity. It’s a true one-pot wonder, minimizing cleanup and maximizing flavor. I start by browning the chicken in a skillet, allowing the skin to become beautifully crisp. Then, I layer in the aromatic onions and garlic, followed by the rice and flavorful chicken stock infused with saffron. Popping it in the oven takes the work out of the equation, allowing me to attend to other tasks while dinner simmers to perfection. The result is a juicy, flavorful chicken nestled in a bed of perfectly cooked rice, absorbing all those delicious flavors throughout the cooking process. The final touch of fresh parsley adds a burst of freshness that perfectly complements the rich saffron and savory chicken.

This recipe is incredibly versatile. Feel free to experiment with different herbs and spices to suit your taste. A dash of lemon zest would add a bright citrus note, while a sprinkle of chili flakes would introduce a touch of heat.
