Step-by-step

  • Put the pot on saute mode high, add mustard seeds and cumin seeds & add the serrano pepper and onions in oil and saute well.
  • Add ginger garlic paste fry for a minute or two.
  • Add the tomatoes and fry till mushy. Add the spices mentioned.
  • Add water, potatoes and check for salt.
  • Turn off Saute mode and put manual high for 4 minutes and do NPR or quick release after 5 minutes.
  • Garnish with cilantro and serve hot.

Unlike a dry potato bhaji relying solely on turmeric and tempering, this curry builds a rich, acidic base by reducing diced tomatoes until they break down entirely into a paste. Tomatoes contain natural glutamates that concentrate as water evaporates during the high-heat sauté phase. Cooking the ginger-garlic paste for precisely sixty seconds removes harsh sulfur compounds without burning the delicate aromatics.

Adapting for Dietary Needs and Equipment

This formulation contains zero animal products by default, requiring no substitutions for vegan diets. Potatoes absorb liquid rapidly under pressure. Setting the pressure cooker to manual high for four minutes ensures the center cooks through without turning the exterior to mush. Allowing a five-minute natural pressure release before venting finishes the cooking process gently using residual heat.

  • If the sauce appears too thin after pressure cooking, switch back to saute mode for two minutes to evaporate excess moisture.
  • Substitute neutral grapeseed oil for canola at a one-to-one ratio if flavor neutrality is preferred over mustard oil characteristics.
  • Store leftovers in a sealed glass container for up to three days at four degrees Celsius.
