Step-by-step

The Starch Ratio and Texture

Can potato starch be swapped directly for cornstarch without altering the final set? Potato starch hydrates quickly at lower temperatures, meaning the custard thickens faster than it would with standard wheat flour or corn derivatives. Whisking the yolks, sugar, and starch vigorously prevents immediate lumping when the hot dairy hits the bowl, ensuring the potato starch gelatinizes smoothly without any raw, chalky mouthfeel.

Infusing Dairy with Citrus Oils

Why steep organic lemon zest directly in the warming milk and cream mixture rather than adding juice later? Direct heat extracts the volatile essential oils locked inside the flavedo, dispersing aromatic compounds into the dairy fats that carry flavor more efficiently than water ever could. Grating only the bright yellow outer layer avoids the bitter white pith beneath, preserving a clean flavor profile.

Caramelization Mechanics

How does fine raw cane sugar behave under a culinary torch compared to standard refined white crystals? Fine cane sugar melts evenly and forms a shatteringly crisp glass cap without scorching, provided you apply the flame in sweeping, continuous motions. Building two thin layers of sugar rather than one heavy dusting guarantees structural integrity, creating a robust shell that yields cleanly to the edge of a spoon.
