Step-by-step

  • Preheat oven to 350 degrees Fahrenheit and set a 9x13 baking dish to the side.
  • In a medium saucepan, on medium heat, add both soups and then add two soup cans of water. Stir frequently and cook until most of the lumps are gone.
  • While that is cooking, pour the entire box of rice into the baking dish and spread out evenly.
  • When soup is done, pour ¾ of the mixture onto the rice. Stir to make sure all of the rice is moist.
  • Lay chicken breasts on top of rice and season with salt and pepper to taste. Push the chicken down slightly so it sits in the rice.
  • Then pour the rest of the soup mixture on top.
  • Cover dish with foil and cook for 1 hour.
  • Take the dish out of the oven, remove the foil (be careful of the steam), turn chicken breasts over (you can salt and pepper the other side if desired) and press back into the rice.
  • Cook uncovered for an additional 25 to 30 minutes.
  • Remove from oven and serve warm.

Easy Chicken and Rice Casserole: A Weeknight Winner

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and preferably something the whole family will enjoy. That's why I've become a huge fan of casseroles. They're essentially one-pot meals, requiring minimal prep and cleanup, leaving me more time to focus on other things – like getting the kids ready for bed or catching up on my favorite show! This Easy Chicken and Rice Casserole is a perfect example. It’s a comforting, classic dish that’s surprisingly simple to make, even on the busiest of weeknights. The creamy mushroom and chicken soup base creates a rich and flavorful sauce that perfectly complements the tender chicken and fluffy rice. It's a guaranteed crowd-pleaser, and the leftovers are just as delicious the next day!

The beauty of this recipe lies in its simplicity. You don't need any fancy culinary skills or a stocked pantry. Just a few basic ingredients, and you're good to go. I love how versatile this dish is too. Feel free to experiment with different vegetables. Adding some chopped broccoli, carrots, or peas would add extra nutrients and color. You could even swap out the chicken for turkey or another protein. The possibilities are endless! This recipe is a blank canvas for your culinary creativity. It’s a real testament to the idea that delicious doesn't have to be difficult. It's the kind of dish that allows you to spend quality time with your family, rather than stuck in the kitchen all evening. And, let's face it, sometimes that's the most important ingredient of all!

Beyond the weeknight dinner: This casserole is also perfect for meal prepping. Make a double batch on the weekend, and you’ll have delicious lunches or dinners ready for the entire week. It reheats beautifully and travels well, making it ideal for potlucks or gatherings. It’s the perfect make-ahead dish to bring to a friend's house or to take to a family event. This is a recipe that truly gives back in terms of time and convenience, making it a staple in my household and a go-to for anyone looking for a hassle-free, flavorful meal.

Tips and tricks for success: For the best results, I recommend using good quality chicken breasts. They'll stay moist and tender during the cooking process. If you're short on time, you can use pre-cooked rotisserie chicken instead. Simply shred it and add it to the casserole in the final stages. Another pro-tip? Don't be afraid to experiment with seasonings. A sprinkle of garlic powder, onion powder, or paprika will add depth of flavor. And for a little extra kick, add a pinch of red pepper flakes! Finally, allow the casserole to rest for a few minutes after taking it out of the oven before serving. This allows the flavors to meld and the casserole to set slightly, making it easier to serve. Overall, this Easy Chicken and Rice Casserole is a true kitchen staple. It's simple, delicious, and versatile, and a surefire way to please even the pickiest eaters. So, the next time you're looking for a quick and easy weeknight dinner, give this recipe a try – you won't be disappointed!
