Separate tuorli e albumi.
Potete servirlo caldo o freddo.
Operating with minimal equipment requires relying entirely on physical feedback rather than specialized gadgets. This classic Italian custard relies on a bowl set over simmering water and the precise measurement of fortified wine gauged directly through an empty eggshell. Incorporating heat too rapidly will instantly coagulate the proteins in the egg yolks, turning a silky emulsion into a coarse scramble. Controlling the flame beneath the double boiler to maintain only a gentle steam prevents this disaster while slowly incorporating air. Whisking continuously for five to ten minutes introduces air into the mixture until the volume triples and the whisk leaves a distinct ribbon trail across the surface. That textural transformation serves as the primary indicator of doneness, signaling that the emulsion has trapped enough air to hold its structure. Stopping at this exact moment ensures the foam remains light and glossy rather than dense or grainy. Once removed from the heat source, the custard can be rapidly chilled over an ice bath while stirring constantly to halt the cooking process entirely.
