Thermal Mass and Pan Selection

Chopped garlic carries the aromatic heavy lifting for this dish, releasing volatile compounds instantly upon contact with hot oil. Standard home burners struggle to maintain BTUs under heavy loads. A carbon steel wok distributes heat evenly across vertical walls, preventing steam pockets. Avoid overcrowded pans. Two cups of julienned vegetables release enough moisture to drop oil temperatures below the critical 350 degrees Fahrenheit threshold. Cook vegetables in batches if scaling the batch beyond two servings.

Scaling and Storage Mechanics

Doubling noodle quantities requires doubling the cooking water volume to prevent starches from gumming the strands. Maintain a vigorous boil with at least four quarts of water. Cook noodles one minute under package instructions before shocking them in ice water. Prepared noodles hold in an airtight container for up to 48 hours at 38 degrees Fahrenheit. Reheat portions in a smoking-hot skillet for 90 seconds to revive texture without overcooking.
