Standard recipes rarely explain why a pinch of baking soda transforms heavily steeped black tea from aggressively astringent to remarkably smooth. Introducing a minuscule amount of sodium bicarbonate raises the pH of the water, neutralizing these harsh acids and softening the overall flavor profile without altering the fundamental plant aromatics. Temperature control during this initial extraction dictates the baseline quality of the beverage. Boiling water, registering at 212 degrees Fahrenheit, maximizes the rate at which caffeine and flavor compounds diffuse into the liquid during the standard 15-minute steep. Squeezing the tea bags at the end of this phase ruptures the delicate cellulose structures of the leaves, releasing excess tannins directly into the concentrate and reintroducing the bitterness that the baking soda was added to combat. Dissolving sugar into the hot, concentrated tea mixture utilizes thermal energy to break molecular bonds, allowing sucrose to achieve full saturation at concentrations that would remain stubbornly granular in cold water. Adding cold water afterward drops the temperature rapidly, diluting the syrup down to a palatable concentration before refrigeration. Regarding substitutions, honey or maple syrup introduce distinct floral or woody notes that chemically conflict with the traditional tannic profile of black tea, whereas unrefined cane sugars add a noticeable molasses undertone due to residual surface impurities.
