Step-by-step

  • Preheat the oven to 450 degrees F.
  • Remove the chicken from the fridge and bring to room temperature, about 30 minutes.
  • Cut the potatoes into 1¼ inch slices.
  • Pat the chicken as dry as possible, both inside and out.
  • Generously season the cavity with salt and pepper, then stuff it with the lemon half and thyme sprigs.
  • Rub the outside of the chicken with the olive oil, then season all over with the Herbs de Provence seasoning and salt and pepper.
  • Place the chicken breast side up on a cutting board and use kitchen twine to tightly tie the legs together.
  • Place the chicken breast side down in an oven safe saute pan or baking dish.
  • Roast on the bottom rack of the oven until the skin is golden and the juices run clear, about 1 hour 15 minutes.
  • Thirty minutes into roasting the chicken, spiralize the potatoes with Blade C (do not peel) and lay them out in a baking tray.
  • Season with salt, pepper, and garlic powder and toss to combine.
  • Bake in the oven for 25 minutes along with the chicken or until the potatoes crisp up.
  • When chicken and potatoes are done, switch the oven to broil.
  • Remove the potatoes from the oven and set aside.
  • Flip the chicken over (breast side up) and broil for 3 minutes to crisp up the skin and turn golden brown.
  • As soon as the chicken is done broiling, remove from the pan and set on a cutting board.
  • Take ½ cup of the pan juices from the chicken and pour over the pan with the potatoes and toss with tongs to combine.
  • Tent with foil to keep warm.
  • Cut off and discard the kitchen twine on the chicken.
  • Using a carving knife or chef's knife, cut between the thigh and the breasts to remove the legs.
  • Cut between the thigh and the drumstick, in between the joint, to separate the legs into 2 pieces.
  • Starting at the breast bone, slice off each breast.
  • Arrange on a platter with the potatoes and serve.

My First Roasted Chicken Triumph!

I'll admit it, the thought of roasting a whole chicken used to intimidate me. I envisioned a complicated process, requiring years of culinary expertise and a perfectly seasoned kitchen. But, as a busy working mom, I needed a delicious and healthy dinner option that wasn't reliant on takeout or pre-packaged meals. So, I decided to challenge myself and try roasting a chicken for the first time.

My initial apprehension quickly melted away once I started. The process was incredibly straightforward, requiring surprisingly few steps. The most challenging aspect was deciding which recipe to follow, but ultimately, I chose one that felt attainable and focused on simplicity. The aroma filling my kitchen as the chicken roasted was intoxicating; a rich blend of herbs and roasting meat that instantly calmed my pre-dinner jitters. I was so engrossed in watching the chicken brown to perfection, I nearly forgot to set the timer for the potatoes. Thankfully, I caught it just in time! The potatoes, roasted alongside the chicken, absorbed the delicious chicken juices, creating crispy, golden sides that were perfectly seasoned.

The moment of truth arrived when I carefully carved the chicken. The meat was incredibly juicy and flavorful, a testament to the simple yet effective seasoning. The skin was crisp, adding a delightful textural contrast. The finished dish was a complete success—a picture-perfect roast chicken, accompanied by crispy, flavorful potatoes. It exceeded my expectations. My family was thrilled, and the entire meal was devoured in a matter of minutes. From that day forward, roast chicken became a regular fixture on our dinner table, a comforting and satisfying meal that I always looked forward to preparing.

Tips for Roasting Chicken Success

Brining: For extra juicy chicken, consider brining it for a few hours before roasting.

Temperature is Key: Use a meat thermometer to ensure the chicken is cooked through to 165°F (74°C).

Resting: Allow the chicken to rest for 10-15 minutes after roasting before carving. This allows the juices to redistribute, resulting in a more tender and flavorful bird.

Seasoning: Don't be afraid to experiment with different herbs and spices to find your perfect blend.

Vegetable Companions: Roast your favorite vegetables alongside the chicken for a complete and flavorful meal.
