  • 1 splash brandy

Instructions:

  1. Season the steak with salt and pepper.
  2. Heat the butter in a large frying pan over medium heat.
  3. Add the steak to the pan and cook for 2-3 minutes per side, or until cooked to your desired doneness.
  4. Remove the steak from the pan and set aside to rest.
  5. Add the shallots to the pan and cook for 1-2 minutes, or until softened.
  6. Stir in the flour and cook for 1 minute.
  7. Gradually whisk in the beef stock and single cream.
  8. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  9. Stir in the brandy and cook for 1 minute more.
  10. Pour the sauce over the steak and serve immediately.
