Step-by-step

Moisture Control and Slicing Dynamics

Pressing firmness begins the moment paper towels absorb surface water from one-centimeter slabs of block material. Water inside soybean curd prevents oil from reaching the exterior, blocking the frying process. Slicing the pressed block into uniform cubes creates multiple faces for browning in extra virgin olive oil over medium-high heat. Skipping this initial pressing step traps water inside the protein structure, resulting in a soggy texture rather than a crisp exterior crust. Maintain consistent heat during the browning phase to ensure the edges achieve adequate coloration before introducing any liquid ingredients.

Liquid Reduction and Spice Integration

Combining water, soy sauce, apple cider vinegar, ground cumin, and smoked paprika in a separate vessel before pouring into the hot pan prevents spice scorching. Spices burn quickly when exposed directly to dry heat without hydration. Pouring the aqueous mixture over the browned cubes requires turning the burner to maximum output to rapidly drive off moisture. As the liquid reduces, stir frequently to coat each piece evenly with the concentrated aromatics. Introduce freshly cracked black pepper only after the volume of liquid has significantly diminished, protecting the volatile essential oils from degrading under prolonged boiling temperatures.
