  • Preparing Time: 15 minutes
  • Total Time: 30 minutes
  • Served Person: 4

Step-by-step

  • Remove the top one or two layers of petals from the banana blossom until you get tightly fitting layers at which point you don't need to discard them.
  • Fill a large bowl with water. Add 1 tsp of salt and a few drops of lemon juice to avoid discoloration. Mix well.
  • Hold the banana blossom such that the broad bottom is facing you. Make horizontal and vertical cuts on it by whacking on it using your knife.
  • Place it on a cutting board and begin to shred it so you get really tiny shreds. Start moving the shreds into the bowl of salted water.
  • Finish cutting all the blossom this way and place all the shreds in the bowl of water.
  • Strain the water using a large strainer. Squeeze the shredded blossoms to squeeze out maximum water. Leave in the strainer.
  • In a food processor, grind the coconut, cumin and garlic with the 2 tbsp of water to get a coarse paste. Do not grind it fine. Keep aside.
  • In a kadai or a wok style pan, heat the coconut oil.
  • When hot, add the mustard seeds.
  • When they splutter, add the onions and curry leaves.
  • After a minute, add the shredded blossoms and add the turmeric and red chili powder. Stir fry for 2 -3 minutes. Check for seasoning and add salt as needed.
  • Cover and cook for about 2-3 minutes.
  • Add the shrimp and stir fry for another 3-4 minutes till the shrimp is opaque and cooked all the way through.
  • Finally add the ground coconut masala (paste) and stir fry well for 1 minute or so until well blended. Check for seasoning before turning heat off.
A Culinary Adventure: Mastering the Art of Banana Blossom Thoran

My Banana Blossom Thoran Journey: A Taste of Kerala

As a busy professional, finding time to cook delicious and healthy meals can feel like a Herculean task. But lately, I’ve discovered a real passion for exploring new cuisines, and Kerala’s vibrant flavors have completely captivated me. One dish that stands out is Vaazha Kodappan Thoran – a banana blossom stir-fry that's both incredibly flavorful and surprisingly simple to make. This recipe, far from being intimidating, has become a regular feature in my weeknight dinners, showcasing the beauty of simplicity and fresh ingredients.

The initial hurdle, the banana blossom itself, initially felt daunting. I confess, I was slightly apprehensive the first time I encountered this unusual ingredient. Finding a ripe, perfect banana blossom at the local market was an adventure in itself, but the friendly grocer guided me through the process of selecting the right one. The process of preparing the blossom, meticulously removing the outer layers and then delicately shredding the delicate inner petals, was meditative in a way I didn’t anticipate. It’s a reminder to slow down and savor the simple acts of preparing a meal, transforming a raw ingredient into something delicious and nourishing.

The magic of this dish lies in the balance of flavors. The subtle sweetness of the banana blossom is beautifully complemented by the fragrant spices – the warmth of cumin, the assertive bite of chili, and the grounding presence of coconut. The addition of shrimp (though entirely optional, and easily substituted with tofu or chickpeas for a vegetarian option) adds a lovely textural contrast and enhances the savory notes. The dish is a testament to the power of fresh, high-quality ingredients, each element working together in perfect harmony.

But beyond the taste, the banana blossom thoran holds a deeper significance for me. It’s a reminder to embrace the unexpected, to step outside my culinary comfort zone, and to discover new flavors and cultures. Cooking has become a form of self-care, a mindful act that allows me to de-stress after a long day and reconnect with myself and the wonderful world of ingredients. It's a ritual I truly cherish, and one I encourage everyone to try, even if it involves venturing into slightly unfamiliar territory.

Beyond the Recipe: The Beauty of Culinary Exploration
