Caw's Cornbread Muffins

These are really delicious! I like using polenta meal instead of regular cornmeal. It's more coarsely ground and I think gives a better flavor.

These delectable treats, with their tender crumb and golden-brown crust, are more than just a food; they're a cherished tradition passed down through generations.

As a seasoned housewife, I've spent countless hours perfecting my cornbread muffin recipe. My secret ingredient? Polenta meal, a coarsely ground cornmeal that adds a unique texture and flavor to these muffins. It's like taking a bite of sunshine, with a hint of sweet corn and a satisfying crunch. The perfect accompaniment to any meal, these muffins are a staple in my kitchen and a favorite among family and friends.
