Step-by-step

  • Wash the chicken and cut into bite-sized pieces.
  • Coat the chicken in potato flour and soy sauce. Set aside.
  • Clean one orange thoroughly with washing-up liquid and hot water, then rinse. Grate the zest.
  • Juice the oranges and 2 tablespoons of lemon juice. Top up to 500 ml with water.
  • Add 1.5 tablespoons of soy sauce, a tablespoon of sugar, the orange zest, 2 tablespoons of potato flour and a large pinch of salt.
  • Peel and grate the ginger, peel and crush the garlic. Halve the chilli pepper, remove the seeds and finely chop.
  • Heat a large frying pan, add 2 tablespoons of butter. When the butter starts to foam, add the chicken, spread evenly over the pan and leave for a minute. Turn the pan so that the chicken is evenly cooked, or stir occasionally.
  • When the chicken is nicely browned on all sides, transfer to a dish, leaving some of the butter in the pan.
  • Reduce the heat to medium and add the garlic, ginger and some of the chilli pepper and fry for a while.
  • Add the orange juice and cook, stirring constantly, until the sauce thickens, for a few minutes.
  • Season to taste: add more soy sauce, sugar or lemon juice.
  • Add the chicken and cook on a low heat for a while longer, until the chicken is cooked through but still juicy.
  • Serve with rice, sprinkled with spring onions or green onions.
