Smoked Fish Rillettes

My parents always buy smoked salmon, but I prefer it on a bagel with cream cheese. Believe it or not, I found this recipe on Annie's Eats to make a mousse using cream cheese. You can use it as a spread or make it look fancier by piping it onto crackers (I used rosemary ones). Next time I think I'll pipe it onto sliced cucumbers instead!

Step-by-step

1/4 cup lemon juice, 1 pound fish, smoked (salmon) skin and bones removed, 3/4 cup onion, red minced, 6 ounces cream cheese at room temperature, 1 pinch pepper, cayenne, 1 teaspoons pickapeppa sauce, 3/4 teaspoon white lemon pepper, smoked fish, sugar, brown, salt, kosher, alderwood, microgreens or dill for garnish, pumpernickle bread or cucumber cut and toasted, 2 cucumbers, english
  • Dump everything together into large bowl and mash together.
