The Necessity of Refrigeration

Dough temperature dictates success in this recipe. Warm fat melts before the structure sets in the oven. Chilling the dough for at least one hour firms the butter and shortening. Solid fats trap air pockets that generate steam during baking, yielding tender cookies rather than flat disks. Do not skip this resting period.

Rolling and Flouring Technique

Work on a lightly floured surface to prevent sticking. Too much flour alters the moisture balance and makes cookies tough. Roll the dough to an even thickness of one-quarter inch. Uniform thickness ensures every piece bakes at the same rate. Bake at 350 degrees Fahrenheit for precisely seven minutes. Watch for a pale golden edge as the visual cue for doneness. Residual heat finishes the centers outside the oven.

Freezing and Make-Ahead Strategies

This dough responds exceptionally well to freezing. Wrap the disk tightly in plastic wrap and store it for up to three months. Thaw the frozen disk overnight in the refrigerator before rolling. Alternatively, cut the raw shapes and freeze them on a sheet pan before transferring them to an airtight container. Bake frozen cutouts directly from the freezer by adding two minutes to the total baking time.
