Step-by-step

  • Rinse fish under cold water and pat dry.
  • Coat fish with some olive oil.
  • Sprinkle kosher salt, pepper, and dill on both sides of fish.
  • Let rest for about 20 minutes.
  • Heat frying pan to high and add about 1 TBS olive oil.
  • Add fish fillet and lower heat to medium.
  • It is at this point you can add 2 tsp butter to the pan (optional).
  • Cook fish for about 3-4 minutes on one side depending on the thickness.
  • Turn fish over and cook for an additional 3-4 minutes or until fish is cooked through and flakes easily.
  • Squeeze some lemon over the fish.
